What I eat in a day 😋. I don’t know about you but ever since I started intermittent fasting I have been loving eating dinner for breakfast and breakfast for dinner. -
-
I have been doing IF for one month now. I fast for 15 hours and eat for 9 hours. It’s become second nature and I love not having to prep breakfast the night before like I used too. -
-
I have learned to train fasted which I never thought would be possible. But your body does learn to adapt and it’s now no longer an issue. -
-
I like not eating until later as it allows me to be more productive in the mornings. -

🔹”BREAKFAST”: I had 3 turkey sausages with zoodles, tomato and herb sauce with spinach and cherry tomatoes. 🔹LUNCH: I had a prawn Marie rose salad with sautéed asparagus and green beans. 🔸DINNER: is when I like to have “breakfast” food. This time I had a smoothie bowl made with blueberries, frozen mixed berry blend, @alpro coconut milk and soy protein powder. For toppings I used chopped Brazil nuts, flaked almonds, chia seeds and @apesnacks salted chocolate crispy coconut curls. 🔹SNACKS: the rest of the crispy coconut curls, @yushoisnacks soy and balsamic vinegar snap peas. Not pictured 2 of the salted caramel rolos and 2 chocolate peanut pretzel bites. Both of these I have been recipe testing for my blog. You can see a picture of them on my feed 😋. -

It’s Sunday and we have absolutely no where to be today so I am taking full advantage of the nice weather and time at home to grill some ribeye steaks and cabbage steaks. Omg have you ever tried cabbage on the grill? It’s so good, brings out a sweet flavor in it.

A lil ‘cheesy’ cauliflower chicken bake for your Sunday night 💃🏼 recipe follows: INGREDIENTS
• 3 cups cauliflower rice • 3 cups of broccoli • 2 cups of cooked shredded chicken • 1 tbsp coconut oil
• 1/4 cup onion, chopped
• 2 cups cauliflower rice • 2-3 cloves garlic, minced • 1/4 tsp salt • 1 and 1/2 cups broth • 1 cup coconut milk • 5 tbsp nutritional yeast • pepper to taste • 1 tbls cornstarch • 1 tbls cumin/coriander • 1 tsp chilli INSTRUCTIONS
1. Preheat oven to 200c.
2. In a large bowl, combine 3 cups of cauliflower rice, broccoli florets, and shredded chicken. Place mixture into prepared baking dish.  Set aside while you prepare sauce.
3. In a medium pan, melt coconut oil over medium heat and add onions.  Cook for 3 minutes to soften. Add two cups cauliflower rice, garlic, and salt and cook for another 4-5 minutes.  Remove from heat and add broth, milk, nutritional yeast, pepper, cumin/coriander, and chilli. With an immersion hand blender (or regular blender), puree sauce until creamy smooth. Scoop out about 1/2 cup of the sauce into a cup and whisk in cornstarch until completely smooth.  Reheat remaining sauce until steaming but not boiling and whisk in cornstarch mixture.  Continue whisking for a couple of minutes as the sauce begins to thicken.
4. Pour thickened sauce over chicken mix and shake baking dish to evenly disperse. You may need to fold mixture a bit to get sauce to evenly coat veggies.
5. Bake for 45 minutes, until bubbly and golden.

We came to the Sundays farmers market late this morning because all 3 of us decided to sleep in. Only unripe fruit was left but feel so blessed to be able to have amazing tropical fruit even if it will take time to ripen. This plate has a papaya, guavas, star fruit, avocados, dragon fruit & sugar apples. I also scored lots of spotty bananas that are peeled and put in the freezer for banana ice cream .

DID SOMEONE SAY PIZZA? 🍕😋❤️

I posted my homemade pizza on my IG story yesterday, and y’all went NUTS over the fact that I was able to eat it & still stay accountable with my goals.

“Wait you can eat that?”
“I wish I could eat like that!”
“How did you do that and still make it healthy?”

Now, listen. If you’re anything like me, pizza is my one love (sorry jason ... jk ily)
But forreal, ya girl LOVES her some delivery Dominoes pizza. HOWEVER, my insides don’t love it. It makes me feel extremely bloated. It makes my stomach hurt. It’s just not worth the misery to me, to be honest. 🤢🙅🏼‍♀️
So, let me give ya the deets on how I did this, sista! ⬇️

✨When I knew I wanted pizza, I thought to myself ‘how can I make this so it makes my insides happy?’ I went through each ingredient and found a way to make it more nourishing.
▪️Whole wheat crust, low sugar sauce, lean protein, veggies, + fat free cheese. Voilà!
✨The first thing I did in the morning (before I ate anything) was enter in all of the ingredients. This ensured that I allotted the accurate amount of calories for the meal.
▪️Then, I planned my other meals accordingly, using the leftover calories I had for the day. Thus, not going over my calorie goal for the day!
✨I ate the pizza. Satisfied a craving nourishingly, and went to bed with a full + happy tummy ☺️

Key points: THINK about how you can best nourish your body. PLAN ahead. ENJOY yourself.

Healthy eating does NOT have to mean chicken + broccoli every night if you don’t want it to, sweet sister 👏🏻

I’ve had a weird food week, learning about Gluten Free eating, trying and mostly failing at Lactose Free, testing my tolerance for #highfodmap things then low and behold TOTM hits the day before weigh in and I feel like a whale 🐳

I couldn’t stay for Group today but decided to take a deep breath, weigh in and draw the line. I’ve more or less STS for the past 5weeks so I fully expected a gain

I can’t believe I’ve lost a pound! You’d think I’d lost 7lbs the way I jumped off the scales 😁😁😁

Just goes to show - you should always weigh in - you just never know - you might be pleasantly surprised. I can honestly say I’ve never been so chuffed to lose ‘just a pound’ x

Can you tell I spent my morning at the farmers market?

The sweet potatoes & carrots were baked with olive oil at 400 degrees for about an hour in a baking dish covered with tin foil. I poke my sweet potatoes with a fork beforehand & cut the ends off my carrots.

The asparagus & onions were steamed in a covered sauté pan with olive oil, minced garlic, & lemon juice on a low heat. I let my garlic get golden brown before adding the veggies. .
.
The chicken breast was cooked in a cast iron skillet at a low heat with salt, pepper, & olive oil. I just eyeball my chicken until it looks cooked through, then I cut into the thickest side to double check before removing from the heat. .
.
Served with a side of rice & a squeeze of lemon juice!

Mushrooms are a great source of vitamin D, copper, niacin, potassium, and phosphorus. They also provide vitamin c, protein, and iron.

I was shocked to find that after 3 years of eating lots of vegetables, drinking vegetable juices, eating lots of berries, beans and greens + healthy plant fats, my Eyesight apparently improved a good bit!
Although still far from perfect and probably influenced by all the screen time most of us experience today, I choose to believe changes can happen - even if your doctor refuses to accept the possibility😂

This is my homemade guacamole from the other day. I just kinda made it up with stuff I had in & frozen avocado as these are sooooo handy to keep in the freezer!

2 frozen avocados thawed
Half red onion chopped
2 cherry plum tomatoes
