Muffin veg alla carruba

Questa è una di quelle ricette che ti lascia a bocca aperta. Semplice, veloce e soprattutto buona! Non pensavo di riuscire ad ottenere un impasto così soffice.
In più, in questo periodo, sto sperimentando la sostituzione dello zucchero con l’uva passa. Il risultato è grandioso. Provate a realizzare questi muffin...sono buonissimi!

Ingredienti
1 vasetto di yogurt di soia all’albicocca
1 vasetto di olio di mais
1 vasetto di latte di soia
1 vasetto di uva passa
1 vasetto di farina di carruba
2 vasetti di farina tipo 0
1 bustina di cremor tartaro

Preparazione
Mettete in ammollo l’uva passa in un bicchiere di acqua, per circa mezz’ora. In una ciotola setacciate le farine e il cremor tartaro. Unitevi lo yogurt di soia e i liquidi (olio di mais e latte di soia) con i quali avrete precedentemente frullato l’uva passa.

Amalgamate bene e versate in 6 stampini (meglio in alluminio) monoporzione fino a metà dell’altezza. Informate a 180°C per 20-25 minuti. Verificate la cottura infilzandoli con uno stuzzicadente.

2 tbls Peanut Butter
1 cup Cracked Oats
1/2 cup Flaxseed
1/3 cup Honey
2 tbls Dark chocolate chips
1 tsp Vanilla
1/2 cup Crushed walnuts
Mix all ingredients together except walnuts roll them in balls roll them into walnuts and place in freezer. These keep well in the freezer! 🧡

Bought them mostly for a flavorful carb source while traveling. With 58 carbs and 14 fat, I can easily fit the whole thing within my macros with a protein of choice. And best part - about $1 at Costco! Box of 5 for $5. Is anything $5 at Costco?! Apparently this is!

So price comparison: similar (or even a little less expensive) than other microwavable rice, but this has the sauce packet with it, so that makes it come out on top for me :) Let me know if you try this out! Great for an on the go meal or fast dinner or lunch, and when in a pinch, could be a good option. The curry is gluten free but not vegan due to a shrimp paste used.

one of my favourite summer snacks to cool down lately has been açai bowls. my bowl is packed with antioxidants and I even threw in a few greens for the added benefits. 💪🏼 (unsweetened almond milk, spinach, @sambazon açai puck, frozen blueberries/strawberries, almond butter and topped with coconut flakes, fresh @driscollsberry organic strawberries and some granola) SO GOOD ✨😫

Vegan Superfood-fueled #Nutella Mousse! Soo Delicious.... 🤤🌰

~ 1/2 Cup of Pitted Dates ⠀
~ 400ml of Coconut Milk⠀
~ 1/2 Cup of Walnuts⠀
~ 2tbsp of Cacao Powder⠀
~ 1tsp Vanilla Extract⠀

Soak the walnuts for at least an hour or overnight, then combine/blend all ingredients together, pour the mixture into your chosen glasses and leave in the refrigerator overnight or for at least two hours to let the magic happen..✨
I topped mine with coconut shreds and dark dairy-free chocolate! 🥥🍫😋

When you can't decide you bake both 🤷🏼‍♀️ Delicious banana & blueberry loaf and muffins 😍 GF, DF, refined SF, super healthy and soo danm tasty. Recipe below 🤩

Ingredients 🍌3 ripe bananas 🍌1/4 cup coconut oil 🍌1 tsp apple cider vinegar 🍌Pinch of salt 🍌1/2 tsp ground cinnamon 🍌1 1/4 cup almond meal 🍌1 tapioca flour 🍌1/4 cup coconut flour 🍌2 heaped tsp baking power 🍌1/4 teaspoon bicarbonate of soda 🍌1/2 cup unsweetened almond milk 🍌1 cup blueberries 🍌1 cup coconut sugar/ honey

Method

1.  Preheat oven to 180 degrees Celsius
2.  Peel the bananas and place in a wide-bottomed bowl, then use a fork to mash until you get a smooth paste

3.  Place the coconut oil in a separate large bowl and melt over a saucepan of boiling water or in the microwave
4.  Once melted, add the vinegar to the same bowl along with the salt (and cinnamon) and almond meal

5.  Sift in the flour, baking powder and bicarbonate of soda. Add coconut sugar/ honey.

6.  Add the mashed bananas, and mix well, adding the milk a small amount at a time as you may not need to use it all depending on how liquidy your bananas are - you may also need to add a little more milk if your bananas are dry

7.  Add the blueberries and fold them in gently to make sure you don’t crush them

8.  Transfer the mixture into a loaf tin lined with greased baking paper or muffin tray

9.  Scatter over coconut

10.  Bake for around 45 minutes until risen and golden brown and an inserted skewer comes out clean

11.  Once out the oven, leave to cool completely
12.  Keeps covered in the fridge for up to a few days - best reheated in the toaster!
