HMR Veggie Curry Entree Stir Fry for Two.
2 boxes of HMR Veggie Curry
1 lb. Of chopped Asian vegetable stir fry vegetables like: Green peppers, broccoli, red peppers, snap peas, snow peas, white onions, red onions, mushrooms, carrots, Bok choy, bamboo shoots, baby corn, water chestnuts.
1 to 2 tsp of red chili powder
1 tbsp of crushed garlic
Chop all veggies to reasonable bite size pieces. Spray very little oil in pan (preferably a 12" or larger), using a piece of paper towel, rub it around. Place chopped vegetables in the Stir fry pan, then turn the heat on low/ medium. Add all the veggies.When it starts to sizzle, start stirring the vegetables around, then add the garlic and chili powder to the 2 entrees, stir, then place on top of veggie stir fry . Start stirring it all together after 5 minutes, continuing to Stir often on every 2 minutes so as not to burn. The frequency will be how quick your oven cooks. Then after about 12 minutes, turn off heat and enjoy.
For extra veggie fun, can be placed on top of zucchini, Carrot, or cucumber "noodles" (spirals) for extra crunch and fun flavor.
