1 Medium eggplant
1 Large carrot
1 Steamer bag of green beans
Spices of choice (garlic, onion, paprika, basil, etc.)
1. Preheat oven to 450 degrees.
2. Chop eggplant and carrot into thin flat slices (chip-like).
3. Spray a baking sheet with non-stick cooking spray. Spread eggplant slices, carrot slices, and green beans on baking sheet.
4. Sprinkle veggies with spices of choice. Roast in oven for 15-22 min. Then broil for 5-7 min until crispy.
5. Serve immediately.
