Messy, lazy, vegan... that’s how I cook😋❤️ and it’s always fucking good. Mostly because I put so much love into my meals!!! Yo, this nourishes this human vessel I’m in, you best believe imma feed it up good!🌿👏🏼 So now, I wanna share with you ladies the easiest, simplest laziest meal ever: pasta stir fry🍝. I shared with my #LazyGirls today and felt like yeah, you deserve to enjoy this meal too!!! Just boil pasta as usual (I use brown rice pasta). In another pan, stir fry garlic & mushrooms with coconut oil until nice and reduced. Then, add protein (I used vegan sausage), cook for a bit and then add kale. Add coconut oil as needed. When pasta and mixture is ready, mix together and add vegan cheese, salt and pepper and viola. 20 mins later, you have pasta!!! Feel free to add any other veggies or spices you love. I always top with sriracha and a dollop of toasted sesame seed oil for mmmmm!!!! 👌🏼 #TheLazyGirlChallenge

Back to the grind with my final class before my research and capstone, but seeing the light at the end of the tunnel on my Masters in MusEd from @kentstate ! I was so inspired to keep going today, despite feeing low and tired, with the beautiful sunset I saw on the way home. I was tempted to get fast food because I was fighting a headache and exhaustion. The sunset scene helped me to center myself and take a breath to just calm my thoughts and listen to my body. My body is hurting, so why should I hurt it further? So I whipped up some salmon, leftover potatoes, and green beans. Honestly I wasn’t looking forward to dinner at all tonight 🤷🏻‍♀️ Do you ever have dinner planned and just go.....ehhh let’s order something 🍕?! Well I’m kind of hangry and going through the detox phase of clean eating because meals have been so off since the holidays, then of course I over did it all weekend because I knew I was going to get focused for 80 days.... So headaches, feeling tired and a bit irritable are all very real the last couple days!

Change isn’t easy you guys and surely isn’t always sexy.... But to have something different we must do something different, right?! So we stuck to the plan and this little burger lettuce wrap was ahhhmazing!!! Organic lettuce, diced organic tomatoes, organic grass fed beef from our local farmer and a little organic mustard!!!! Num num!!! Each choice we over come the little voices that may want us to cave is another step closer to who or what we’re working for ❤️ Day 3/80 •••••••••••••••••••••••••••••••••••••
