I love to cook. But I kinda stink at meal prepping and planning most of the time...especially when I’m busy, stressed and have too much on my plate already. 🙋♀️ I tend over buy things, can’t find room in my pantry, fridge or freezer or I just don’t get enough of what I need. The way I plan and prep will be changing dramatically once I start going in to work again 😬 I can’t tell you how grateful I am for my meal planning service right now. What do you do when you buy a big ass bag of carrots and celery and gargantuan leeks and you run out of room in the fridge? MAKE VEGGIE STOCK! Just throw your veggie scraps, salt, pepper, head of garlic, couple of bay leaves, fresh thyme in a stock pot and let it simmer all day. VOILA. Currently craving alphabet soup but we only have pasta noodles so I’ll have to wait for that, but in the mean time I’ll be making potato leek soup with my little veggie stock babies. And then if I’m lucky enough to take home any turkey leftovers after Thanksgiving I’ll definitely be using this to make turkey soup. PS. When you make veggie broth you can throw your scraps in the compost which you cannot do with chicken broth 🤗

Have you ever been a bit too heavy-handed with your seasonings when making soup? 👩🏼🍳🍵 Salt can make the difference between a bland soup and a delicious one, but too much salt can be very unpleasant! At least for most people...I'm a bit of a salt addict so I don't think anything can ever be too salty. 😳😬😉 To rescue a salty soup, drop a peeled potato into the pot. Been a while since I’ve posted a dinner... and last night’s was good. 👌🏼 ——————————————— Sweet mustard glazed ham 🐖 mustard greens 🥬 , baked potato 🥔 , and (of course) cast iron skillet cornbread 🌽 . ———————————————— It’s like I’m from the South or something... 🤷🏼♀️ ———————————————— Speaking of the South: there’s a southern tradition (and perhaps it’s elsewhere, too) claiming “a clean plate is a happy plate.” But that mentality leads to overeating and a generally poor relationship with food. Hello—🙋🏼♀️—been there. Sometimes they serve too much on your plate. Sometimes your eyes are bigger than your stomach (Thanksgiving, every year 😂). It’s okay to not eat every bite sitting there. Enjoy the food, enjoy the fellowship. Stop when you’re full (yes, listen to your body!) and save (or toss) the rest.
