On my bid to #makeveggiessexy I'm going to start sharing simple veggie recipes with you. This is an oldie but one of my favourite ways to sneak beetroot into my diet. .
Hummus doesn't just have to be used on a cheese platter either! I love using hummus: - spread on a sandwich or wrap - stirred through pasta to substitute sauce - as a base for soup - dolloped onto salad
This beetroot hummus uses aquafaba (the liquid in the can) instead of oil. This helps to make it really creamy! .
Ingredients: • 1 can butterbeans, drained (keep the aquafaba) • 1/4 cup aquafaba plus extra • 1 heaped tsp ground cumin • 1 garlic clove • Juice from 1 lemon • 300g cooked beetroot (I use tinned) • 2 heaped tbs tahini
Method: 1. Blend all ingredients in a food processor or using a stick blender 2. Add 1-2 tsp more aquafaba at a time to thin until smooth and creamy 3. Serve as desired .

CHICKPEA, COURGETTE, CARAMELISED ONION AND THYME BURGERS 🌱 🍔 Burgers are 100% always a good time, who else agrees? 😍🙏 while I do love the occasional completely messy vegan burger, making a whole foods version at home is just as much of a treat 👩🏼🍳 these burgers are super healthy and packed with vitamins and PROTEIN 💪🏼 To make these: firefly dice a red onion and on a low heat caramelise the pieces until they’re soft and juiiccyyyyy 🤗 while your onions are caramelising pulse your chickpeas in a blender until smooth, adding in a pinch of salt and pepper as well as a teaspoon of thyme and 1 tbsp of nooch 🙌🏼 At this point you want to grate a WHOLE zucchini to add to your chickpeas along with a big dollop of tahini! Combine all your ingredients and form the mix into burger shaped patties which you can then bake in the oven or fry up in a pan over a medium heat 🌻🌱 these keep for a few days in the fridge but also freeze really well! 💁🏼♀️👀☺️ happy fri-yayyy! xxx

Olen nyt kesän lopusta ottanut tavakseni ostaa 1/2 - 1 ämpärillistä vihanneksia, kasviksia, marjoja ja hedelmiä viikossa. Kuukausitasolla tämä on jo huomattava määrä. Ainut miinuspuoli tässä on se, että kun tottuu syömään hyvää (koti) ruokaa, ei pidä muiden tekemästä ruoasta niin paljoa 😉
Basil chickpea hummus with some airfried falafels and veggies!!😍. . I absolutely love hummus and addition of basil or pesto absolutely enhances the flavors!! . Got these frozen falafels @itcmasterchef and they are just so delicious!! . For the hummus 1 cup boiled chickpeas 1 cup basil leaves 2 cup olive oil 1 tbsp tahini Salt and black pepper 1 tsp Cumin powder 1/2 tsp 1/2 cup chopped walnuts . It’s wise to first make pesto and then blend the hummus and pesto together . Add basil, walnuts and 1 cup olive oil to blender and blitz it . Next make the hummus by adding a little water to the chickpeas, tahini , spices to make a paste .
