I realized that life is too short to wallow in the negative. But I do understand how EASY it is. Being positive and looking at the bright side takes work and it’s a constant practice but it’s a habit you CAN develop. You need to work on it every. single. day. until it becomes second nature. Decide that you are going to become OBSESSED with your life and I promise you, it’ll get that much better.⁣⁣

Chocolate for breakfast? Sign me up! 🙋🏻‍♀️🙋🏻‍♀️🙋🏻‍♀️ Chocolate and Greens that is. This super simple smoothie bowl is packed with good for you ingredients including almond butter and lots of spinach! 🥬🥥🍫
Quick tip: during the winter months, I avoid adding frozen fruits or ice to my smoothies as my body doesn’t like (or need) cold this time of year. Instead, try this:
Recipe:
1 banana
2 tablespoons almond butter
1-2 dates
2 cups of greens like spinach (think big handfuls)
2 cups of coconut milk or another milk alternative (more to desired consistency)
2 tablespoons unsweetened cocoa or cacao.
Top with almonds and shaved coconut
Makes more than one serving!

This bowl of pasta is creamy, rich, yet doesn’t make you feel *blah* afterwards. If you aren’t familiar with tahini, it’s just ground sesame seeds - good source of iron, zinc, and copper.

Tahini lemon pasta sauce! 🍋
*This recipe makes quite a bit; you can store in fridge for later use!
•1/4 cup tahini
•1/4 cup cashew milk
•3 tbsp nutritional yeast
•2 tbsp EVOO
•Juice of 1 lemon
•Salt and pepper to taste
Combine all ingredients in a bowl or blender and toss with your favorite pasta (highly recommend @barilla red lentil or chickpea pasta) ✨

Here’s a simple roasted winter squash how-to so that you can add a little beta carotene to all of your meals this week 💛🧡Swipe over to see the first 2 steps!


TO PREP: Halve squash and scoop out the seeds and stringy flesh. Peel if needed (delicata skins are edible) and chop. I used a delicata squash from the farmers market and a bag of @traderjoes organic butternut squash (pre-chopped)💃


Lay out squash on a pan. Drizzle with oil and sprinkle with sea salt and spices. (I used avocado oil, sea salt, cinnamon and chili flakes) Use clean hands to stir, making sure all of the squash is well coated.


TO BAKE:
Preheat oven to 400 degrees F. Roast your prepped squash for 30-35 minutes, stirring halfway through. •

TO EAT:
Now that you have a soft, caramelized and comforting meal prepped veggie, you can have it for breakfast with HB eggs, add it to a salad, put it on a taco, use it in a quinoa bowl - or whatever your heart desires!

Lately I’ve been stressing out about this page. The fact that I’ve been so busy that I’m not getting two posts up a day or the fact that I haven’t posted on my blog in a long time. Since when did a fun thing for me become a competition or a race? I’ve been struggling to find the balance between all my jobs and making sure I have enough time to create content on here. Frankly I’ve been putting so much pressure on myself to make sure i get everything done on time. I wake up on my days off with a long list of things i need to do for this page. I want to knock out 3 recipes in one day, maybe a forth if I’m lucky. All of this, the scrambling and the stress, brings me back to yoga. The thought of grounding, of finding your footing when life gets crazy. I’m guilty of letting my stressors of this page consume me. I think: am I even being a good “food blogger”, am i producing content people want to see, am I even doing this right? It sounds so ridiculous, but it’s true. So I’m challenging myself and my fellow food bloggers on here who may or may not feel the same way, the change your way of thinking. Be grateful for the content you put out when you can and be grateful for your ability to do it. If this page is consuming you take some time away, find grounding in your life. Take a second to appreciate what you have around you; your health, your loved ones, your life. Always find the good in every situation your are in ✨

Stairs // posting for accountability ➡️ my goal is to get this down to 400 under 20
Oddly enough I don’t like using the stairclimber at @equinox, with longer legs going full speed, my knees tend to hit the machine so I prefer using my school’s facilities

I did 10 min on 1 min recover, 5 min on 1 min recover.. up to 400 to finish ...40 seconds better than yesterday!

Check out this fancy shmancyyyy ACORN SQUASH BOWL 😜 Decided to try this out today cuz I’ve seen a lot of people make these, & they’re so dang pretty!!!! I was actually so proud of this after it was done haha!! 🙌🏻🙌🏻 It took a bit more work than I expected (overall SUPER easy to make - I just couldn’t cut the dang squash & was getting frustrated 😂), but it came out sooooo BOMB!!!! I LOVED it - the taste & texture was 🔥!! It was definitely worth it, & hey, sometimes the good thangs just take a bit more work 😉🌟🌟

Sooo without further adooooo, here’s how I made it: I cut zee acorn squash in half, put sea salt & cinnamon on it 🤤, roasted it for an hour on 400. Filled it with @siggisdairy pumpkin skyr, granola, almonds, pomegranate, & golden berries 🤙🏻 Peanut butter would’ve been super good too!!! Have any of you tried a stuffed acorn squash before?! 💜

✨ what's in your wellness toolkit? for a long time, I overused exercise. Exercise and controlling food were some of my only coping strategies. These days [after taking 2+ years off from a gym routine] going to a gym has been a really powerful tool for my mental health, without being the only tool. Personally my sweet spot is 2-3 times a week but everyone is different⠀

Kind of a random meal.. roasted potatoes with chicken gravy, green bean casserole, and a salad with pulled chicken, pickled ginger, and an asian vinaigrette. All paleo except for the pickled ginger (contains aspartame, boooo). I’ll be honest, I’ve been struggling with food since finishing the Whole 30. Some days I feel like I’m doing really great and making healthy choices, but other days I let myself overindulge and then I feel guilty. But I don’t EVER want to foster that mindset... punishing myself for eating Chinese takeout, or feeling like I have to “make up for it.” I’m really trying to change my mindset, and be healthy mentally, not just physically. Because in the end, food is food. And if you eat the pizza, just eat it and move on with your life, and don’t let it discourage you from continuing a healthy lifestyle. Diets are short term, but a lifestyle change is where you will see positive progress. And that’s what I’m still learning and relearning daily.
