My meal prep for the week 😃 Yesterday I spent a few hours meal prepping and this was the result 🤗 I made a strawberry banana loaf for my breakfasts for the week, some @chickapeapasta shells in a creamy cauliflower/potato sauce (seriously so good!), some baked potatoes, two veggie burgers, and a bunch of veggies for salads 💁🏼♀️ I sautéed some peppers & zucchini & onion in avocado oil with basil, oregano, onion powder, salt & pepper, and chopped some radishes, green onion, and cucumber 🥒 Having prepared veggies in the fridge makes my salad assembly much easier! 😅 I have some leafy greens in the fridge so all I really need to do is throw everything into a bowl with minimal effort 🙌🏻 This covered my lunch today and will cover my dinners for the rest of the week (lunch is already taken care of thanks to @gomaemealprep which you can see on my stories! ☺️) Meal prepping helps me cut down on ordering takeout when I’m not feeling like cooking - I’m way more likely to eat a healthy meal when it’s already prepared and sitting in my fridge 😋 .
Hope you’re all having a great start to your week! 🥰 This week is a super busy one for me - Ben leaves on Thursday for a Calgary work trip and then I don’t see him for 8 days and we’ll meet up in Nova Scotia for our vacation. Still have so much to get done before then and it’s going to be weird going an entire week without seeing each other - I don’t think we’ve gone longer than four days without seeing each other in our entire relationship 😜
