Fish Sinigang with locally available ingredients from my kitchen .
Sinigang is a sour and savoury soup prepared with any meat or fish and is native to Philippines . The light soup with vegetables like lady's finger or Okra , snakebeans ,tomatoes ,herbs ,chillies ,fish sauce and tamarind paste makes it a refreshing one for summers . I have used our locally available fish for this Sinigang though salmon ,Barramundi , Bangus or milkfish are traditionally preferred in Filipino cuisines . With a plate of rice and a hot chutney to accompany ,this healthy flavoursome recipe is just awesome !! .
Recipe : Ingredients
4 pieces of fish .
4 cups water
1 tomato quartered ,
1 cup tamarind juice
Lady's finger 6
Snakebeans 1 cup
Red chillies 5
Burmese coriander 1 bunch
Cilantro to garnish .
Salt to taste .
Method : .
Heat 2 tsp of oil in a wok . Add sliced onions and fry till translucent .
Add the vegetables and saute them .
Add salt to taste .
Now add the water and bring it to boil .
Add the tamarind water to it .
Now add the fish pieces to the broth .
Roughly chop the herbs and add to the soup .
Put on the lid and let it simmer for 10 mins .
Serve with rice .
