Употребление глютена - одна из животрепещущих тем в сфере питания на сегодняшний день. Чем больше изучаю, тем больше убеждаюсь - глютен нужно ограничить, а ещё лучше исключить всем, независимо от возраста, пола, страны проживания, и состояния здоровья. 🙅🏻‍♀️Наука не стоит на месте, сегодня уже достаточно внушительных исследований, показывающих негативное влияние глютена на организм. Давайте по порядку:
☑️ Глютен - белок, содержащийся в некоторых зерновых культурах (пшеница, рожь, овёс, ячмень), который придаёт мучных изделиям клейкую структуру. Считается, что истинная аллергия на глютен, целиакия - встречается у одного человека из ста. Это состояние, когда глютен повреждает ворсинки тонкого кишечника, вызывая тем самым сильное воспаление. В данном случае, единственный и эффективный способ - это исключение глютена из рациона. Постоянные боли в животе, дискомфорт, диарея, плохое самочувствие - симптомы целиакии, полностью исчезают, когда глютен исключается из рациона.
☑️ При том, что целиакия явление довольно редкое, подавляющее большинство из нас страдает повышенной чувствительностью к глютену. Мы можем об этом даже не подозревать, и даже современные тесты на непереносимость глютена не информативны. При повышенной чувствительности к глютену ворсинки кишечника не повреждаются, но иммунная система вынуждена работать в усиленном режиме после каждого, съеденного нами, куска хлеба. Как понять, что есть повышенная чувствительность: исключить глютен на 2-3 месяца и наблюдать за состоянием. Как правило, исключая глютен уходят проблемы с пищеварением, кожные высыпания, «неясность» ума. После таких улучшений люди осознанно переходят на безглютеновое питание.
☑️ Глютен может провоцировать развитие аутоиммунных заболеваний. Являясь аутоиммунным триггером, глютен разрушает стенки кишечника, способствую развитию кишечной «проницаемости» #leakygut. Разрушенные стенки кишечника пропускают в кровоток то, что там не должно быть: остатки еды, бактерии. Отсюда системное воспаление - реакция иммунной системы на «чужаков». Продолжение в карусели 👆

Тема дня – брокколи 🥦

🥦Брокколи – это, на вид мини зеленое дерево, один из невероятно полезных овощей, которые стоит включить в рацион как взрослым, так и детям.

✅Противовоспалительное действие, сульфорафан, содержащийся в брокколи, облаает противораковым действием, в целом овощи семейства крестоцветных (к которым относится и брокколи, “привет ботаника !!”👩🏻‍🌾) исследования связывают со способностью бороться с раковыми клетками.

✅Здоровье костной системы – содержит витамин К и кальций.

✅Для кожи и молодости и иммунитета – богатый источник Витамина А, E и С. На на 100 грамм брокколи приходится 89 мг витамина С больше, чем в апельсине (53 мг на 100 гр). Нам в сутки необходимо 90 мг.

✅Для пищеварения – отличный источник клетчатки, помогает от запоров.

✅Источник фолиевой кислоты – важный микроэлемент особенно для беременных и детей, влияет на здоровый рост клеток.

👩🏻‍🌾Брокколи лучше есть в свежем виде, таким образом лучше усваивается сульфорафан (антиэйдж и противораковый антиоксидант). Первый раз, когда я увидела человека, уплетающего за обе щеки свежую брокколи, я была в шоке. А потом попробовала сама и оказалось очень даже вкусно, можно в смузи, салаты, а если с хумусом в качестве соуса – вообще супер!

👩🏻‍🌾Стебли брокколи содержат значительно больше кальция и витамина C. Поэтому не торопитесь их выбрасывать, а приготовьте вместе со цветками. Можно, например, нарезать тонкой соломкой и добавьте в любое блюдо, свежими, предварительно отварив или обжарив стебли на быстром огне.

❗️Осторожно со свежей брокколи людям с проблемами здоровья щитовитной железы, в данной ситуации её не рекомендуют готовить.

🥗Рецепт салата на фото: листья салата, авокадо, помидоры, брокколи, спаржа и тыквенные семечки. Заправить соль, специи по вкусу, оливковое масло и бальзамический уксус.

Do not underestimate WALKING.

For weight loss: If you've had results before from the gym or other higher intensity exercises, only to not be able to sustain it and see the weight came back on, walking can be your friend.

Like most people, you may have been so motivated that you wanted to crush it and you took on too much too soon. It's not sustainable. Any plateau you hit, there's no room to add more or progress because you're already "crushing it". Start slow, if you're not even above 5000 steps daily, you haven't earned the right to go crush it in the gym yet. Start with walking this is going to be so much easier for you.

For anxiety/stress: Getting outside and moving the body calms the body and moves it more towards a parasympathetic (rest and rejuvenation) state. Just get outside daily and take a stroll. You'll begin to see some of that stress dissipate.

What to do: Use your phone (health app, or other), fit bit, whatever you can and get your current average steps for a day. Most people are around 3000.

Find your baseline, round up to the nearest 1000 and hit that for a week. If you can hit that for 1 week straight, bump it up another 1000. Continue until you get to 8-10k per day.

For reference, 1000 steps is about 10 mins of walking. So you're adding 10 mins extra walking a week. In 5-6 weeks you should be near the goal and you should SEE and FEEL the difference. Just from walking.

Walk. It's 4 Your Health.

Stress triggers our ‘fight or flight’ mode, as a result of something mentally or physically. In the time of our ancient ancestors, this was usually our defence against a ferocious animal or another threat.
The release of hormones that flood the body made it possible to run faster or fight harder to live another day.

These days, however, the threat might be more subtle, but it is occurring over much longer periods of time. This means that our sympathetic nervous system is working overtime, and this includes our heart, adrenals, blood pressure.
It is important to note that this response can be triggered due to both real as imaginary threats.
It can come from everyday life (work, relationships, jobs, technology, traffic etc) and this means we are under chronic stress that leads to inflammation, and inflammation leads to disease.

Mood: Stress makes us more anxious, more irritable and more likely to snap at those we love, lose our patience and our peace of mind. We lose interest in sex, have a harder time focusing and lack of creative inspiration.
Cravings: stress also causes us to crave constant snacking, skipping meals, being inactive, self-medicating with alcohol, smoking or drugs, procrastinating and avoiding responsibilities. Sounds great, right?
Don’t worry, this isn’t suppose to stress you out even more.. here are a few tips to bring you back to balance.
1. Meditate - download a free app (@headspace is a great one to get you started) and find what works for you. 10 mins a day is all you need to make an impact.
2. Get outdoors - connecting to the earth helps replace ions and grounds you.
3. Put your phone down - try to have mini phone detoxes like leaving it at home when you go for breakfast or a walk or if you need to reach someone, put it on flight mode for a few hours.
4. Get some proper shut eye - an oldie but a goodie! If you can, follow a routine and don’t fight the urge to go to bed early, it’ll make waking up with the sun much easier.
Try adaptogens - these plants help the body adapt to stress on a cellular level by increasing resistance to physical, biological, emotional and environmental stressors. Try @orchardstlove or @wearerasa 👌

Hubby wanted chicken tonight, so I decided to make the entire dinner in just one pan. I cut the whole chicken (pastures raised) with a good knife because is much faster and easier to cook when spatchcocked. Covered it in a mustard sage dry rub, added avocado oil, some garlic and lemon. Baked at 450F for 10 mins, turned the oven down to 400 and cooked for 10 more minutes. Added a cubed sweet potato, baked for 10 more minutes. Added Brussels sprouts, baked for 20 more minutes. Let rest for 10 minutes. It was really good.
