I know I don’t normally post non food pics but wowowowow am I impressed with this Togiharu Nakiri!! I’ve been dying to add a Nakiri to my kit for busting out vegetable prep. Hard to tell from the picture but the aesthetics of this knife are stunning with its half Damascus half hammered finish and the dark wood handle with flush rivets. It’s also insanely sharp and what makes it very unique is that it’s more of a western style blade with the designs of a Japanese blade so it’ll hold an edge for ages!! My favorite cut. Spinalis or rib cap. Sits on top of ribeye primal and can be peeled off and trimmed. All the flavor of a ribeye but eats like a tenderloin.

Chef Knives Bevel.
Various bevel of chef knife is kind of the most important aspects that help to define its sharpness, strength, durability, and use.
Bevel is the ground angle and shape of the blade’s edge, and depending on what it’s made of and how it’s ground. At common use, chef knives categorized on 2 different bevels: a double bevel, or a single bevel.
A chef knife bevel refers to surface that has been ground to form the chef knife's edge. A close inspection of a knife will reveal a slight angle/incline on either one or both sides that runs down to the edge. This is the bevel. If there is one on both sides, then it is a double bevel knife. If there is one on only one side, then it is a single bevel knife. The bevel can be ground to a variety of different angles. Generally, the smaller the angle, the sharper the knife.
Smaller angle means more skill and effort to shape them and make sure their not over grind.
