While the world sleeps, a baker's life involves waking up in the early hours of the morning even it it's a weekend. It's all about following a timeline to keep the rhythm flowing. But I dont mind as baking is a form of meditation and a flow of positive energy for me.
Baking is science and involves chemistry to make the magic happen. You have to be precise as unlike cooking, you can't fix it. Its technical aspect involves perfect timing, temperature, ratio's and precision. To excute that you have to fully engage your senses but also I consciously enjoy and relax and while I am focused, I also listen to my intuition, spontaneously adding flavours or textures to my already tried and tested recipe.
And these days, my merry inspiration comes from Christmas Carols, dancing and baking away to the cozy tunes of this festive season. 🎄❄🎶☃️🎶Its beginning to look a lot like christmas🎶🎼🔥🎅🤶
These days I have become obsessed with baking brioche in all my favourite forms....think chocolate ginger and chocolate speculaas cookie, pumpkin brandy and so & on....
