Back in Dallas for week numero dos ✌🏻 for work. Got in late so I opted for a quick dinner to go to eat in my room. Who says eating out has to be difficult while living keto?! INGREDIENTS:
1.3 lbs 99% lean ground turkey
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp chili powder
1 tsp paprika
1/2 tsp oregano
1/2 small onion, minced
2 tbsp bell pepper, minced
3/4 cup water
4 oz can tomato sauce
8 large lettuce leaves from Iceberg lettuce
(optional) 1/2 cup shredded reduced fat cheddar (omit for Whole 30)
DIRECTIONS:

rown turkey in a large skillet breaking it into smaller pieces as it cooks.
When no longer pink add dry seasoning and mix well.
Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.
Wash and dry the lettuce.
Divide the meat equally between the 8 leaves and place in the center of each leaf and top with your favorite taco fixings! -

I have been unmotivated to cook since my best friend for over 24 years passed away Wednesday, my cockatoo Sunny. My husband & I dont have kids. We loved Sunny so deeply like she was our child. She brought such joy and unconditional love to our every day. We are heartbroken 💔
I have been staying on Keto while grieving by picking up fresh greens salads with protein toppings. I have had a chicken salad, a chicken club salad, a steak salad, and a chicken curry salad over the past few days as my daily meals. I am a stress eater and in my grief have been tempted to go off Keto. But i am staying on track and am managing to find healthy fresh Keto meal fast food.
I stopped posting on IG on Thursday but will resume tomorrow, Monday although it is very hard to go on😭🐥❤️

Have some y'all!!! I'm still craving cabbage so I decided to try out fried cabbage with sausage and shrimp 😍😍😍 This is the bombbbb!!! I used mild itailan sausage and fried it in EVOO. Then I sauteed the shrimp in butter and minced garlic. For the cabbage, I simmered it in butter and tossed in sone truvia sweetner (Sweetness goes in cabbage, dont argue with me bish 😤😂) pepper and some of the Paula Deen House Seasoning. 🇷🇺В США есть такая рыбка mahi-mahi - чесслово, не знаю как ее правильно перевести на русский язык, наверно больше подходит «морской окунь»- вкусная, но практически без жира. Пришлось на каждый кусочек положить по кусочку сливочного масла и мой любимый пармезан сверху! I love the squeeze sour cream, but it sure didn't make my carnitas bowl any more pretty 😂 I prepped a bunch of carnitas for this week, we always manage to eat it...no matter how much I make. Pretty boring day and really feeling under the weather, but here is what I ate today.

1. Not pictured, Wawa scrambled egg bowl with Turkey sausage, bacon, roasted peppers and fresh salsa. Had a few sips of a Starbucks coldbrew with an Atkins shake as creamer. Oh! And a pickle.

2. One cup of Aldi's brand of Greek yogurt with a squirt of Mio. Really surprised how much I liked it!

3. Moo shu beef and cauliflower rice! Normally I can house the full container and my pint of rice but I played it smart. Switched out the wire rice for cauliflower rice and dropped the brown sauce. It always comes with tortilla like wraps but due to my celiac disease, they've never been an issue. I barely ate half of the container before I tapped out! This is a great low carb option.

Also not pictured: I've just gotten back onto my meditations, and they really mess with my stomach the first few days. I was at my boyfriend's parents house and she offered me some gluten free crackers to help settle my stomach. Didn't help and just made me feel super guilty. Only had about 5 or 6, not the end of the world!

Oh! And lots of water and a Coke Zero!

Sundays are for #ketobread making. This is the recipe I use. All of these items I personally order off of Amazon, but they could be found cheaper elsewhere. Yes they cost a little upfront, but you can get many loaves of bread from them. Tip for the SAF yeast place in fridge after opening. It will last over a year this way. When you use it just pull it out get what you need, and put it back. I did not come up with this recipe, but it is the best bread I have had on keto, and I make it weekly. I test with a keto mojo, and it never even comes close to kicking me out. Honey is for proofing yeast, and the yeast basically like eats it so it does not count toward anything.
1 cup of water

1 Tbsp. Saf Instant brand yeast
1 tsp of real honey
2 eggs, room temperature

1/2 Cup Oat Fiber

2/3 Cup Ground Golden Flax Meal

1 1/4 Cup Vital Wheat Gluten
1/2 tsp of Xanthum Gum
1 tsp of salt
2 Tbsp. of softened butter
Microwave 1 cup of water for about 45 seconds until it is 100-110 °F

Pour your honey into the water and mix it around so it dissolves

Add your yeast into the honey water and stir it around

Add in your remaining ingredients in the order listed above

Mix and then knead for around 15 mins. If it seems to sticky sprinkle a little oat fiber on table like you would flour when your kneading as much as you need.

Put into a loaf pan cover with a dish towel or saran wrap. IT WILL RISE A LOT.
I sprinkle everything but the bagel seasoning from Trader Joe's on top.
Microwave 2 cups of water until it begins to boil (about 2 minutes). Keep this in the microwave to make it warm and humid.

Place loaf in the microwave BUT DO NOT TURN IT ON. Let rise in there for 1 to 2 hours. Check after one hour and see how much of a rise you have.

Put in oven for 20-25 minutes at 375 degrees.

Busy day and the last thing I felt like doing was cooking dinner. Picked up @chipotle instead. Chipotle is a great low carb on the go meal option. My bowl has chicken, sour cream, lettuce, cheese, and guacamole. So filling you don't even miss the beans and rice 😉 There's also a nutrition customizer on their website. This meal is only 5 net carbs!

Keto is this easy! Keep your plate 2/3 healthy, green, low carb veg - keep protein moderate - and load up on healthy fats!😀 we had friends over for dinner and their plate was the same plus a serving of rice.

Meat is pork loin doused with avacado oil, seasoned with "italiano" seasoning and tossed in the oven for 1 hour at 350 - then let it rest covered for 20 min while you make everything else. Broccolli steamed for 5 min then fried in avacado oil on high - just until browned - then dusted in pink Himalayan salt. Brussel sprouts fried with bacon (in bacon fat, of course😍) - asparagus covered in avacado oil, salt and pepper and into the oven at 350 (after the pork came out.)

Dinner tonight was hibachi-style filet mignon, Caesar salad with tomatoes, and strawberry-lemon water. SO good!! Hibachi steak is my favorite favorite meal. And super low carb! (It looks burnt but I promise it isn’t!) Panera Caesar dressing is 0 carbs and my fave. Lemon water is my go-to, but I decided to throw some strawberries in there since we had some. Incredible!! This has become one of our favorite Keto desserts! You have to be prepared for it to sit in the freezer for four-five hours! It’s calls for 1 cup in heavy cream, 1 tbsp on coco, 4 packets of truvia, 1tsp of vanilla! Shake in a mason jar for 3-5 minutes, place in the freezer! Enjoy in a few hours!

@cutdacarb I posted this before but we have perfected our recipe! 2tbsp of avocado oil, 1 tbsp of lemon juice, brush onto wrap, cut to your preference, sprinkle salt before cooking. Bake in oven on 350 until browned! So delicious!

I personally don’t like the sandwich in a tub! I feel like it’s too much and it doesn’t taste the same. So I started getting it in sandwich form and taking everything off the bread. I ask for extra mayo because you can’t get all of it off the bread.

1 1/2 cup Almond flour
1 tbsp Gluten-free baking powder
2 1/2 cup Mozzarella cheese (shredded)
2 oz Cream cheese (cubed)
2 large Egg (beaten)
Everything season (for topping - optional can be found at Trader Joe) ❤️ Preheat the oven to 400 degrees. Line with parchment paper. ❤️ Stir together the almond flour and baking powder. Set aside.
❤️ Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 2 minutes, stirring halfway through. Stir again at the end until well incorporated. ❤️ Stir the flour mixture and eggs into the melted cheese mixture. Working quickly while the cheese is still hot, knead with your hands until a dough forms.
❤️ Divide the dough into 6 parts. Form/roll a long log with each part, then press the ends together to make a bagel shape on the lined baking sheet. Repeat with the remaining dough. If using everything seasoning, sprinkle them over the bagels and gently press into the dough.
❤️ Bake for 10-14 minutes, until the bagels are firm and golden.
Around the 8 minute mark of the bagels in the oven! Your house will smell so amazing! Can’t wait for the morning to add cream cheese and enjoy it!!

A few cubes of ice
Filled the rest of the cup with rootbeer! Mixed it together! Soo yummy!

I let the meat sit in butter before I put it on the BBQ! I seared it for a few minutes before moving it inside and mixing it together with green beans, more butter, and to top it off, I sprinkled 6 cheese Italian to add more flavor!

Last night I went to my sisters for dinner. They were having Pizza from Pizza Hit! I knew I couldn’t have the pizza, as much as I wanted it. When I got there, I grab a piece of pizza, and took all the toppings off. I may have even licked the sauce off the crust?! Very much worth not eating crust to lose the two pounds🏅
