#ketochristmas2018 side dish número uno! Green beans are one of my favorite vegetables and they are definitely my favorite when they are cooked in bacon grease and paired with a ton of yummy toppings. 😋 Start by cooking 3 strips of bacon (the thicker the better) in a large skillet. Cook until browned but soft. While those are cooking, take 2lbs of green beans, strip them, and wash them. Remove bacon from pan, add green beans to the skillet, and cook until bright green (6 minutes roughly). Pour into a big casserole/baking dish, salt, pepper, and season to taste (red pepper flakes would be AMAZING!). Cook 3 more slices of bacon, chop the cooked bacon into one inch pieces while those are cooking, preheat oven to 350°, and then remove those from the pan when they are finished. Add 2.5 ounces of sliced almonds, 1 teaspoon of garlic, and 1 tablespoon of Parmesan to the pan of bacon grease. Brown almonds slightly, add bacon back in, toss to stir, pour on top of beans in dish. Sprinkle with 3.5 ounces of feta cheese. Put the whole dish in the oven for about 7 minutes to finish cooking the bacon, soften the beans, let the feta melt a bit, and just combine the flavors better. That’s it!
