So on a random whim this weekend I bought a pair of blue jeans at Costco for 10 bucks. They are incredibly comfortable and I haven't owned a pair of blue jeans in like 10 years. I usually only wear black. But I have no regrets, these jeans are super comfortable.

The first two pics were of me after having two kids back to back. Never had a chance to come back from my first pregnancy, and got pregnant 5 months postpartum. Last two pictures was after my youngest turned two, I decided to try keto. Difference between first two pics and last two pics was 8 weeks keto. 156lbs down to 130lbs. Never cheated during those 8 weeks. Felt great, went from size 12 pants to size 4. Large/XL tops to size small. Killed it! Gained some back since (142lbs) but am working on getting back down to the 130lbs I was at. Amazing what your body can do when you fuel it with protein and fat.
This is my motivation!

Lunch is @twrgrassfedbeef polish sausage and an avocado. The quality of this avocado (from Safeway) was subpar and I had to cut off a big chunk :( I’m trying to squeeze in a Trader Joe’s trip sometime this week! I’m officially out of BACON AND AVOCADOS! ♀️

1 head cauliflower, (to make about 4 cups processed cauliflower)
2 eggs, lightly beaten
1/2 c. finely grated Parmesan
1/2 tsp. oregano
1 1/2 c. shredded white Cheddar
Cut cauliflower into florets. Process cauliflower florets in a food processor until the texture resembles rice. Alternatively, you can grate the cauliflower.
In a medium bowl, combine processed cauliflower, eggs, Parmesan and oregano. Mix until evenly combined then season with salt and pepper.
Heat a large nonstick skillet over medium heat. Spray with cooking spray then scoop the cauliflower mixture into a small patty on one side of the pan. Repeat to form a second patty on the other side. (These are your “bread” slices.) Press down on both pieces with a spatula and cook until golden underneath, about 5 minutes. Flip and cook until the other sides are golden, about 3 minutes more.
Top one cauliflower slice with cheese then place the other cauliflower slice on top. Cook until the cheese is melted, about 2 minutes more per side. Repeat with remaining ingredients.
