I didn't get as much meal prep done as I'd wanted cuz I'm not feeling well and definitely not feeling well enough to go to the store, even in my jammies and robe. I worked with what I had on hand and recruited some help to make pizza bites and tuna melts. And I made chocolate covered macadamia nuts to help with my "ailment"...
Pizza bites are one pepperoni on the bottom of a muffin tin, bake at 425 for 5 mins. Then 1 tbsp mozz, 1/2 tbsp cheddar, 6 baby pepperonis, bake another 7 mins. Sprinkle with parm or pecorino, we used an old parm container with pecorino. (You can add or omit a dot of pizza sauce.)
Tuna melts are one can of tuna, drained, 1/4 cup mayo, 1/4 cup sour cream, two eggs, 1 and 1/2 cup shredded cheddar. Bake at 325 for 20 mins. (You can add or omit onion powder.)
Chocolate covered macadamia nuts are 3 nuts in each mold, 2 oz chocolate, nuke for 30 seconds, add 2 tbsp coconut oil, nuke another 30 seconds. Stir with 20 drops sweetener (or to taste) and pour over macadamias. Wait a bit to sprinkle the salt, otherwise it'll just melt into the chocolate. Molds are from IKEA.
