On a rainy Sunday like today, a girl needs pancakes!! This is the only pancake recipe I use, because it's perfect. :) Topped with butter and @lakantosweetener maple syrup. Soooo delicious! I usually make this into 4 standard sized pancakes, but I made 6 smaller ones this time to achieve that stack!
These cook exactly like real pancakes! And taste pretty close, too.
Per pancake (when you make 6): 121 calories / 11F / 5P / 1.5NC
Ingredients -2 eggs
-2 oz cream cheese
-1 tbsp water
-1 tsp vanilla extract
-2/3 cup almond flour
-2 tbsp erythritol/monkfruit blend
-1/2 tsp baking powder
-1/2 tsp cinnamon
1. Blend eggs, cream cheese, water and vanilla in your blender until smooth.
2. Add dry ingredients (almond flour, sweetener, baking powder and cinnamon) to the blender and blend for another minute or so until smooth again.
3. Pour 1/6 of mixture into a non-stick pan and wait until bubbles start to form on top. When you see the bubbles, flip the pancakes and wait another minute or two until the bottom has browned to your liking.
4. Continue with the rest of the mixture and add your favourite toppings and sides!
