Quick meal because we were running out the door to go play a little volleyball!

One complaint people have about healthy food is “it’s just ingredients not food” or “it takes too long”

We have gotten so accustomed to our American way of life- fast food. instant gratification. microwaved meals. .

But is the cost of convenience really worth it? I don’t think so. Our country is full of people who are dangerously overweight, sick, miserable, depressed. .
.
Try eating real food for a week. Nothing processed (if it’s in a box- no more than 3-5 ingredients on the list... that’s an eye opening challenge of its own!) .
.
In the ground, squash is like sponge— soaking up whatever is in the soil— so I always buy it organic! Here’s how to whip up a quick meal:
🌱 roast butternut squash til fork tender (I tossed it in avocado oil, garlic salt, pepper, and parsley)
🌱 cook quinoa as directed 🌱 top your bowl with a little nutritional yeast, ground flaxseed or hemp seeds for easy extra nutrients!

Community.

I think it’s something that is crucial to living a full happy life.

They say that it takes a village to raise a child, but I think we need to take a better look into our lives and look around ... do you have a village?
My village is literally and figuratively all around me. Living within 15 km of of a whole whack of them, and then my own coach on my street, I always know that someone has got my back.
It’s extra special when our families spend time together and our kids become friends.
This weekend has been amazing and in three days we ditch the kids and get adult dock time up north!
It’s a pretty awesome extended family we’ve created for ourselves and we’re always looks for more!

For awhile I’ve been wanting to change up my diet. I wanted to eliminate some things - particularly dairy - to see how my body feels. I put it off for sooooooo long because I LOVE CHEESE!!!! But finally this month I decided to steer more towards a plant based diet. I’m currently eliminating dairy, meat, and alcohol.
I started on August 1 and honestly I forgot I was even doing it because I’m having so much fun learning how to prepare plant based meals, my meals are always so colorful vibrant and energetic, and I feel good!!! I’ve been paying more attention to labels & ingredients and I feel so much better knowing how my food was prepared and cooked- BY ME!!!! Eating plant based definitely requires a bit more planning and prep. I’m so grateful I have the time to plan and prep meals and eat WHOLE FOODS. I’m learning so much about food and my body and I continue to learn more everyday it’s such a fun experience!!! :)
ps i do think about nirchis brozetti’s strange brew and michaelangelos sometimes but I’m surviving!!!

Summer days call for seafood boils.... kind of!

Threw in some boiled potatoes and corn, frozen Shrimp, salt, garlic, pepper and Cajun spice.

15 minutes on the bbq and minimal mess!
I’ve added extra veg to mine and topped with parsley.
For added fun make personal sized packets when you have guests over and they can make their own milder or kick it up a notch higher with 🔥 MORE HEAT 🔥

Let’s talk about ‘picky kids’ (I hate that term by the way). This guy here is the king of ‘complicated’

They all bother him. He’s very fixed in his ways and we often joke that he’s really an 80 year old man in the body of a 6 year old boy. *he actually looked like Jack Nicholson at birth*

But I digress, he’s always reluctant try to Foods and often says he doesn’t like things that he’s loved forever.
But we’re persistent, and he’s now eating cucumbers, carrots, spinach peppers, snap peas, salad, you name it!
and for a kid who used to refuse eggs, he’s all over them ... and in the grand scheme, a squirt of ketchup to get him to eat his eggs won’t kill him.

Bottom line, I decided to get healthy so why wouldn’t I include John-Paul and the kids?

Why do I say I’m “vegan-ish”?

I don’t like confines and labels. I don’t like being penned (pinned?) in a corner. .

And i really don’t like how judgmental and prideful people sometimes get about those labels. .

The main reason though, is because we have chickens in our backyard and a couple times a week I eat a fried egg for breakfast. 🙃

Do I believe we don’t need animal protein and that we can get plenty of nutrients from plants and nuts and seeds? YUP.

And I also know yard eggs are higher in nutrients and lower in cholesterol than store-bought eggs! And also, I like them. So there ya go. .

I went to the grocery store this evening and returned with ZERO meat. If you know me well you know this is HUGE. 6 months ago I ate meat with almost every single meal.
If you aren’t happy with your life or the way you feel, change something about it, your diet would most likely be a great place to start. There is a bit of junk food and a tiny bit of dairy in there and that’s fine, I’m not aiming to be perfect. I still eat meat when I eat out but that’s rare. If I’m preparing a meal at home, 90% of the time it’s vegan.
