120 days challenge: Day 49

Breakfast: Pear, Strawberry and Raspberry Smoothie.
3 strawberries, frozen
5 raspberries, frozen
Water to blend
Blend all ingredients together to till smooth.
Lunch: Apple, Pear and Raisins Bake topped with whipped coconut milk and pumpkin seeds
3 apples, cored and chopped
3 pears, cored and chopped
1/2 cup raisins
1 tsp cinnamon
Zest and juice of 1 lemon
For the topping
1 can coconut milk (place in the fridge overnight)
1 tbsp pumpkin seeds (optional)
Combine the apple, pear, raisins, cinnamon and lemon juice and zest together in an ovenproof dish and bake for 25mins or till the apple pieces are tender.
For the chilled coconut, open the can and scoop the solid part of the coconut milk into a bowl and whip till it holds its shape.
Serve the pear and apple bake with the whipped coconut milk and sprinkle the pumpkin seeds over.
Dinner: Paprika Chicken served with mashed potatoes
2 chicken breast
1 tbsp smoked paprika
1 tsp salt
1 tsp garlic powder
1 tsp ground black pepper
1 tsp dried oregano
Combine the spices together and rub over the chicken breasts. Place the chicken in an ovenproof dish and cover with foil. Bake in the oven for 30mins or till the chicken is no longer pink.
Once the chicken is cooked, allow to rest for 5mins before slicing.
Serve with mashed potatoes.
