Moving is hella hectic but honestly keeping my food simple, nutritious, and delicious has kept me so much calmer than I anticipated it would. For me, it’s serving as further proof of the gut-brain connection! This is a simple base of arugula and sesame seeds. I almost always lay a bed of greens down before topping my meal off with cooked veggies. 🌿 Helps me get my greens in, adds bulk to my meals, provides a nice contrasting texture to my food, and my gut bugs crave it! Busy Wednesday! Tim has a scope today to check everything out as he is still having some indigestion issues. Good news is it’s nothing super serious and will continue to heal eating lectin free! This program has helped his issues substantially compared to where he was a month ago. The Dr told him to continue on the program and make some other small changes.... like not eating so fast! The bone broth I made last night was delish. It was freezing today in Knoxville so I heated some up in a coffee mug and sipped. It tasted amazing and warmed me right up! Dinner was leftover asparagus, brussel sprouts & mushrooms with pasture chicken mixed in. So good! Tomorrow I’m making Dr G’s sweet potato soup and crab cakes. Plant Paradox Day 8, Week 2

Since I have met my weight goal (WOOHOO) I'm going to continue the 30 day challenge to maintain a healthy diet and to be a good example to my boys, and I'm definitely enjoying this experience with my husband. 😘
Because I'd already written out my shopping list and meal plan I was ready to hit the stores and restock my supplies, after a bowl of scrambled pastured eggs and sauteed baby spinach, seasoned with cracked black pepper and sea salt. Note to self; don't go grocery shopping on a Saturday morning. An hour in a half and two stores later I got everything I needed! And even though I had a meal plan ready the night before I felt like switching it up a bit.
For lunch we had the Pastured-Raised Chicken Salad, pg. 72. This was my fist exposure to jicama, and of course I nibbled while I chopped. It had a slight sweetness with an apple-like crunch. This salad was delicious and refreshing!
For supper we had the Garlicky Greens Soup, pg 84. With the ingredients in this recipe I knew it was going to be amazing, and something this house of sniffing, sneezing, coughing peeps needed. Slurp, ahhhhh, good!

Plant Paradox Day 9, Sunday Funday!

Still under the weather but, starting to feel better. Today Doyle told me he's done with the challenge, but not too long after that he was asking what's next on the menu. I think he's hooked ,but in denial. 😁
I'd been wanting to make the Green Egg Muffins, but didn't have the umph to do it, so we ate sauteed baby spinach with scrambled eggs for breakfast. Lunch was leftover Garlicky Greens Soup with a splash of Tabasco. And for supper we made the Miracle Noodle Veggie Bake, pg 94. I loved, loved, loved the veggies in this! I omitted the Nutty Vegan Cheese again, pg 104, but I'll tell you what, it was good but missing something. Next time I'll definitely add that to it.
After supper I had enough energy to go do a little dancing with my sister. It felt great being able to move comfortably again!

Just because it's grey outside, doesn't mean your lunch has to be dull. This is an example of what I'd give my daughter for lunch (and what she ate today)--plantain chips, homemade sauerkraut, broccoli with oil and vinegar on it, A2 cheese, organic turkey, and lovely red pomegranate seeds. She helped me remove the seeds from a pomegranate last week, if you saw my stories.⁣

BBQ CHICKEN PIZZA! Totally Plant Paradox friendly! You can make lectin free sourdough pizza crust like this! Recipe is on page 56 of my e-cookbook SOURDOUGH RISING! This self rising crusty and chewy crust is the closest thing to the old hand tossed yeast crust we all loved. I smothered mine today in LFG BBQ sauce (recipe on my blog), and real Italian Mozzarella! Then topped with grilled pastured chicken thigh, grilled garlic, and sliced red onion. I’m testing some different flours so it’s been pizza all week! Toasted Sweet Potato Skins!

I baked up some sweet potatoes to make gnocchi yesterday. I only needed the flesh, so I saved the skins. The skins packed with so many nutrients and are a great source of dietary fiber, so I couldn’t throw them away! .

I decided to cook them up in the air fryer and they crisped up beautifully! I lined my air fryer pan with parchment as I used parmesan and didn’t want to lose it under the pan. I sprinkled them with the parmesan, salt, paprika, cumin, onion and garlic powder. I cooked them for about 10-12 minutes, turning them several times. .

I definitely wanted more!! I have oxtail in the slow cooker for dinner though, so don’t want to ruin my appetite 🙂

Nourish Cafe in Apia, Samoa has many gluten free options. We had yummy breadfruit fish tacos, coconut crusted chicken, breadfruit fries, and tumeric ginger and soursop kombucha. I didn’t eat any of the bell peppers or tomatoes.

Root veggies love 😍. They are everywhere here in Denmark, local and organic, easy to find. So tonight was a dinner prepared in the oven: a mix of root veggies (parsnips, carrots, sunchockes), red onion, garlic, ginger, rosemary and sweet potatoes - all made on one sheet pan. On another sheet pan we made a spatchcock chicken. I made a fresh rub from a mix of fresh garlic, ginger, rosemary and dry sage, extra virgin olive oil, salt and pepper. Rubbed it on the bird and under the skin. Cooked it all at 175C / 350F for about 45 minutes. Finished with the broiler for a little color. 🌱 The asparagus was blanched. So good 😋. Have you ever sprouted grains?
You’ve probably heard of sprouted grains, but do you know what makes them so wonderful? 📸@tradcookschool and many others agree it’s very important to sprout, or soak any grains, nuts, or seeds you eat. All types of seeds contain phytic acid, an enzyme inhibitor which keeps seeds from sprouting until they are exposed to the right conditions- namely, light, moisture, and warmth. Once the seeds sprout, the effects of phytic acid are neutralized. When we eat grains, nuts, or seeds which have not been put in a clear glass jar and submerged in water, we are eating phytic acid, which will interfere greatly with our bodies’ ability to absorb minerals and nutrients from that meal. When you soak or sprout all kinds of seeds, you are freeing up the maximum nutritional value, and making it easy for your body to absorb it. Not all seeds need to be soaked until they sprout- but the tender green sprouts make wonderful additions to salads and sandwiches!

I want to clarify something. When I spoke about ditching the phrase, "Everything in moderation" yesterday. I meant, STOP making excuses. I didn't mean we ahave to be perfect and/or 100% with our health and lifestyle, EVER!!!! 💟 I'm saying, we need to get REAL. Don't make an excuse, don't say you only have things in 'moderation', just begin integrating healthier things into your life. And KNOW it could take 5 years, 10 years, 15 years to have the routine and lifestyle and body you desire. It's not easy, it's not just 30days of commitment. It's years and years of consistent effort and small changes. You don't have to change EVERYTHING all at once, or even 5 things. Just integrate at least one thing. How I started my health journey way back when: ALL I did was stop having any drinks with sugar in them. That's it, no juice, no soda, no sweeteners, no coffee syrups. I did that for a year, and didn't change anything else. Discipline is a muscle, start using it, start standing in your power babe!!! You CAN do anything. 💯❤️

Birch Benders Breakfast Pizza

I used the Birch Benders paleo pancake mix to make the base of this quick biscuit-like pizza. (I apologize for the picture quality. I am waiting on a new camera battery)

I mixed 1 tablespoon soft coconut oil with spices (1/2 teaspoon ish basil, oregano, garlic powder, onion powder, pepper and salt to taste). I then cut in 1/2 cup on the birch benders mix and 1/2 teaspoon psyllium (to help it have structure in order to pick the pieces up). Once crumbly, I mixed in 2 tablespoons warm water. Using wet fingers I patted into a circle on parchment lined pan. Bake at 350 for 10 minutes. Remove from oven and add desired toppings and bake an additional 5 minutes. Broil a couple minutes to brown top if desired. .

For the topping I blended a handful of spinach with some walnuts, EVOO, salt & pepper, 1 dried fig and a little parmesan. I topped that with sautéed mushrooms, green onion, soft goat cheese and goat mozzarella. Once cooked, I drizzled with some walnut oil and extra oregano. I intended to also drizzle with a balsamic reduction but I can’t find my balsamic vinegar. .

This crust is perfect for a quick breakfast pizza. I wouldn’t consider it a substitute for traditional pizza crust as it is still biscuit like. .

Давно что то я не выкладывала салаты... А их как раз нужно кушать по-чаще! И не из помидоров-огурцов, а из зелени всех мастей! С авокадо, брокколи, спаржей... Этот салатик сложился, как это у меня и бывает, из того «что осталось в холодильнике». А раз он получился таким простым и вкусным (да ещё и красивым), делюсь рецептом с вами. Приличную охапку (а возможно и всю пачку) не горькой рукколы (наверняка вы замечали какая может быть разная эта трава: от нежной, слегка с горчинкой до почти острой), один спелый авокадо и немного красного радичио выложить в тарелку и перемешать. В кастрюльке в подсоленной воде отварить lectinfree макарошки из сорго или льна (где такие брать написано в предыдущем посте). По готовности, слив воду, обильно полить пасту оливковым маслом (vigrin, первого отжима). В наш салат добавить горячие макароны, перемешать, выжать сок лимона, а так же добавить выпаренного бальзамика. Он тут играет важную ноту во вкусе, впрочем как и лимон (обращайте внимание на состав бальзамика - никаких консервантов - ищите эко варианты!). Если чувствуете что нужно еще немного посолить и добавить оливковое масло - feel free (но это уже по вкусу). Сытно, вкусно, полезно. А кто не знает что такое «сорго» - это крупа, одна из немногих, наряду с пшёнкой, которая не содержит лектинов и соответственно глютена. #зелёныйсалат #greensalad #lectinfree #сорго #салаты #эддиета
