Damn, these some fresh beets!

Fall is here and that means root vegetable stews and soups 💚💜❤️ One of our favourites is that distinctive red soup, Borscht. The variety most well known and associated with the name in English is of Ukrainian origin.

Here are some ingredients we love to include in our Borscht:
- Beets (obviously 😊)
- Potatoes
- Carrots
- Onions
- Dill (handfuls!!!)
- Vegan sour cream

CHICKEN LIVER 🌮🌮🌮 .
I'm only a day late to the #tacotuesday party 😫 but don't worry, they still taste just as good 😉

TBH I wasn't a huge fan of the texture and consistency of liver by itself. It's weird because I'm so used to eating chewy muscle meat, while this offal practically melted in my mouth after one bite. So, I thought it might help if I disguised it in a meal with some guac and I was so right! If I didn't know any better (because obvs I made it myself) I wouldn't have even known that I was eating liver inside my taco 🤪

Yesterday on the 5th day of my kitchari cleanse I had a realization. It first started when I remembered a fond memory of my mom and I watching movies while snacking on a healthy version of cheese puffs and indulging in one beer each. It reminded me of a moment in the past where I was happy. All of a sudden I craved those cheese puffs and beer. However, when I told my mom this she mentioned how the food was associated to an emotion and how the reason why I might want those foods was to recreate that emotion in my body. It was such an aha moment.

After being on this cleanse for 5 days, I realized that food has become somewhat of an entertainment in my life to keep me distracted from myself. I think about all the times I have used food to replace boredom, stressful moments, sadness and even happiness! For the first time I don’t have to think about food when I eat the same thing for breakfast, lunch and dinner. It’s not a part of my daily thought process, except knowing that it’s there for the pure purpose of nourishing my body, not feeding an emotion.

I can’t believe I’m going to say this but I loved my 7 day kitchari cleanse so much that I extended it to 8 days!! Everyday my mind becomes clearer and clearer. How in the world is your gut related to your mind? Well, I don’t have to find some article or research paper to convince you that it is. Just do a cleanse and watch how it can be true for you! Sometimes we rely so heavily on other people’s opinions; doctors, nurses, chiropractors, tarot readers, astrologers, etc, that we forget to listen to our own bodies. You are the only person that has lived with your body day in and day out and you still can’t intuitively know what’s the deal when something goes wrong? Thats just a load of bs! 😂 I am feeling so good that the next few weeks I’ll be experimenting with foods. No, I won’t be super indulging on unhealthy options just because I feel so good. I will work with my body so that it can let me know what works for me. That’s just my two cents. Take it or leave it ✌🏽

Something I learned in my therapy for Binge Eating Disorder is that snacking is ok, especially for somebody who needs to eat a bit more routinely to prevent bingeing. Ideally, for me, I need to eat in a pattern of breakfast - snack - lunch - snack - dinner - snack (if needed). I chose this today for my morning snack. All whole food ingredients, no junky fillers. Some benefits for my health from@this bar: ALMONDS are good for skin health and help regulate blood sugar. CASHEWS help prevent against heart disease and cancer. DATES aid digestion and they have slow-releasing sugar which helps balance blood sugar. Delicious and nutritious!

I'm ignoring the storm raging outside today and making the most of the last of my summer kitchen in terms of scents and flavours. Basil is my favourite herb and Pesto is one of my all time favourite accompaniments, fast and easy to prepare, full of flavour, goodness and it pairs perfectly with almost everything! 😁
This is my recipe:
BASIL PESTO 🍃

4 cups fresh basil 🍃

Juice of 1 lemon 🍋

1 garlic clove 🥔

¼ cup extra-virgin olive oil 🍯

½ teaspoon sea salt 🍥

1 teaspoon black pepper 🍘

BLEND: Blend all the ingredients until smooth. Serve as a dressing for your salad. 🍽

I love these books. I got Eat Beautiful for Christmas last year and Healing Foods just yesterday. They are a great introduction into using food to heal yourself. EAT BEAUTIFUL focuses on face skin, mouth, hair and body skin conditions like premature ageing, eczema, greasy hair, brittle hair, cold sores and discoloured teeth to name a few. HEALING FOODS focuses on individual herbs, spices, fruit, veg, meat fish etc and what their properties are, how they can improve your health and how to use them best to make the most of them. I have been enjoying reading these and working out what I need to include more of in my diet to help heal my body.

Breakfast close-up! Little Hawaiian vibes in my breakfast today, keeping it aloha on this rainy morning. ***I’ve got Greek yogurt topped with lilikoi (passion fruit), chopped macadamias, coconut chips, pumpkin seeds and bee pollen.*** If I close my eyes, I can almost feel the warm breeze rustling the palm trees and hear the surf breaking....a girl can dream, right? ***Some benefits from my breakfast:

#chickensoup with fresh lime & cilantro for the baby soul 🍲

Poor little guy has had a rough couple of days so Chicken soup was necessary to get my little tot up and running again.

I finished it all off with lots of lime for extra vitamin c🍈 & I always put his broth in a sippy cup to make sure he enjoys the most important part. 2 bowls and 1 sippy cup later & my kid is running around like nothing ever happened. For now 😬🤞🏻 Hubby and I added more salt and some jalapeño to ours 🤤
