Banana Bran Muffins

Great snack, packed with fiber.

Ingredients
1 1/2 cups wheat bran
1 1/4 cups buttermilk (can use almond milk)
3/4 tsp baking soda
1 tsp canola oil
1/2 cup packed light brown sugar
(Or alternative sugar)
2 eggs
4 medium sized bananas
1 cup nutty wheat flour
1 tsp baking powder
1/4 tsp salt

Instructions
~ Preheat oven to 180C and line a 12-cup muffin pan with paper liners.
~ Stir bran, milk and baking soda in a large bowl. Let stand 10 min. ~ Mix mushed bananas, oil, sugar, and eggs in another bowl until smooth. Stir into bran mixture until combined. ~ Mix flour, baking powder and salt in a small bowl. Stir into bran mixture until just combined.
~ Divide among prepared cups and bake until a tester inserted into centre of muffin comes out clean, approx. 20 min.
~ Let cool in pan for 10 min.

Happy Tuesday!

I'm ready for the snow, not gonna lie!!!

As for me, the rest of this month I'm really honing in on my HEALTH and FITNESS.

Stress as we know is a silent killer and can contribute to a decline in our health. There are many different areas in our lives that can trigger stress and at times we may not even know we are stressed. That is why it is important to partake in regular relaxation practice that helps to release those endorphins and keep us feeling happy and healthy.
Anti-stress strategies:
1. Lye down with eyes closed
2. Essential oils such as lavender, eucalyptus, cedarwood, rose, grapefruit etc.(smell them, or use a diffuser)
3. Prayer and meditation
4. Hot baths with essential oils
5. Moderate rhythmic exercise
6. Yoga
7. Massage
8. Sitting outside and enjoying nature
9. Slow down, be present and focus on the moment
10. Deep breathing
11. Cast all of your worries and cares to God (most important)
