Day 5 - Thermomix Cookidoo Cook-a-long challenge.
Asian style rice with egg & vegetables (from the USA site)
When planning this weeks menu, I was trying to incorporate as many family friendly, quick meals as I could to make life easy on busy weeknights. I didn’t realise there were so many pasta dishes in the mix lol, so I jumped ahead to this rice dish.
Three things I LOVE about this dish!
1. It’s layered cooking at its best. The whole dish is cooked in the Thermomix. Rice, Veggies, egg and the sauce.
2. I love how the Thermomix is smart enough to change the metric measurement to ounces for this dish so I can just use scales as normal without working out ounces to mls.
3. It’s loaded with veggies and its so delicious!
I used broccolini, stems and all, capsicum, green beans, zucchini, celery, carrot and onion as my vegetables. This recipe makes a HUGE amount. I have enough for 10 serves!
