Cheesy fries - this is a dish that I used to love when I was little, actually I love it even now, but somehow it got lost among other favourite dishes, old and new. Without the fried egg, these homemade chips make a delicious side dish to grilled meat, accompanied by fresh tomato salad. In terms of what cheese to use, I used Lancashire because it’s closer to the cheese we make in Romania, but you can use Cheddar, or blue cheese, or even goat’s cheese. Anything you like.
Today I thought they would make a great lunch, and I baked them in the oven, so they are more like homemade oven chips. That’s the beauty of them, no matter how you cook the potatoes, even just steamed or boiled, if you grate a bit of cheese on top, you take them to another level. On a day when I eat meat, these fries will accompany a grilled pork chop, or if I just steam the potatoes, they will be eaten with poached fish and a mustard yoghurt sauce.
But for my #meatlessmonday they are perfect as they are.
Anyway, what I actually wanted to say from the very beginning was to wish you all happy St. George’s Day, I hope you celebrate it well wherever you are. St. George is the patron saint of Romania, too, and in fact of many other European countries, but we don’t celebrate it as such. Apparently if it rains today, we are going to have a year full of riches and achievements
