Almost ten months old and although she does have pit resemblances Diego and I have concluded that she's definitely not full pitty. She's too long and skinny and has a rather long skinny muzzle instead of the bulkier square face . She also loves to herd when we're hiking and will constantly circle you and her fur is long! (Not sure about all the perfect comments but I’ll take it as a compliment) Well I truly believe all steps starting with your #salmon#trout#steelhead#mackinaw or #kokanee being as fresh as possible same if using fish that was previously frozen which also must be in excellent condition once thawed out properly. . 2. Brine and cure properly. 🙅🏽♂️(Never brine in metallic / metal containers period) 🤦🏽♂️. . 3. Once cured depending on which style you’re trying to make always lightly rinse each piece in cold water. . 4. Always air dry - depending on surrounding temperatures especially in colder months you can always use a fan in helping your fish to dry until tacky ( this part can take minutes to hours ) to the touch ( I like my fish to be tacky when touched but not wet - this part can take a little practice to get used to ). . 5. Learning the best temperature your smoker operates at for your desired style of #smokemeats which at times can be different depending on your surrounding temperature. . 6. Woods to use - keep in mind not only does wood flavor your smoke meat but it can be used as a great color intensifier - also the type of wood to use come from personal preference and taste - so only you can answer that. .
