Tapioca starch, we use it in our #dairyfreecheesemixes and #dairyfreecheesekits, but do you know what it is? #Cassava, #yuca (you-kuh, not yuck-uh), #manioc, it goes by many names because it is widely eaten around the world including Brazil, Africa (most of the continent, I imagine), Dominican Republic, Vietnam. It's a staple food that grows easily and is especially awesome these days if you're avoiding nightshades (potatoes) for autoimmune issues.
If you cook it into French fries you'll notice how perfectly crispy they are on the outside, as if they've been coated, and if you boil it you'll see that it leaves a sticky, starchy residue, both are due to the starch.
Used strategically, #tapiocastarch gives our cheeses a gooey, melty quality similar to dairy cheese. No chemicals or questionable gums needed!
