「Margherita with Buffalo Mozzarella」 Tomato Sauce, Buffalo Fresh Mozzarella, Basil

This was our first pizza as we wanted to try the most basic first. They have two similar versions, one is “Tamaki” their signature with cherry tomatoes, smoked mozzarella and pecorino Romano , one is regular mozzarella. For me I always want to try simple one, but I do prefer buffalo mozzarella.
And this first own was a wow. The wow came instantly when the chef placed the pizza in front of us and the smell of the hot freshly baked pizza dough and the chemistry of the basil, tomato and cheese.
We couldn’t wait much and dig it. The saltiness! I rarely had pizza crust with such strong saltiness rather than salt seasoning from the ingredient. The crust had great flour flavor (and salt) and even just eating it alone it would not be bland.
The cornicione was not as crazily puffed or charred like some in the States (although sometimes I found Americans love to overdo it a bit...) but it was just a very good light crust with a soft chewiness to it. I like this texture as it was right in between dense and fluffy.
Both mozzarella cheese and tomatoes came from Italy and they were adequately tasty. The center was slightly wet though it was very rare to come across one that is not. The cheese too, tasted very high quality and it tasted just right with the salty crust.
This first margherita was definitely one of my fave among those we tried
