Lemon orzo soup. Onions, garlic, celery, carrots, veggie broth, 1/2 cup orzo, spinach, kale and mushrooms. I added a mix of almond milk and coconut butter because I didnโ€™t have any coconut milk. ๐Ÿ˜‚ it came out more stew like after simmering for a while, but it was still really tasty.

These were made from a leftover soup I made this weekend. The mushroom, ginger, and garlic broth was slurped up so fast! So I took the veggies and rice, added Tapioca starch (helps soak up the left over wetness) added flax meal and baked them at 350. Covered with Trader Joeโ€™s Vegan Kale Pesto on top, then served over Beet Noodles๐Ÿƒ๐Ÿฆ‹

As you already know, we are fans of the fast โฑ๏ธ and easy recipes ๐Ÿฒ. Nowadays, the hectic world and the low-quality #food outside make us more creative so that with less time in the kitchen we can prepare #nutritious food!
๐Ÿ“ Today's #recipe is with our favorite aubergines!
Bake 2 whole eggplants ๐Ÿ†๐Ÿ† and 2-3 green peppers in the oven for about 40 minutes. Wait for them to cool and peel them off.
Cut into large pieces. Add a peeled pink tomato ๐Ÿ…, fresh onion, two cloves of garlic, olive oil and vinegar, pepper and salt (we like @kotanyibulgaria ๐Ÿ‘Œ)
In this form you can consume as a salad ๐Ÿฅ— or as a side dish to the main meal.
And if you do not have one, grate two boiled eggs and a little cheese and you have the perfect dish with all the necessary #macronutrients!
The third option is to add chickpeas and again you will have a #tasty and complete dish!

Work has been kicking my ass. Mom life also kicking my ass. I just wanna lay on my couch, sip margaritas and eat chips and guac....BUT I did what Inknew would make me feel better.
It isnโ€™t always easy. (In fact most days are not easy or convenient). You just need to push through the stress, bullshit excuses, and all of the noise. YOU deserve a few minutes to yourself...a few minutes that will make you feel SO much better.

I wanted to share this quick and easy #onepotmeal with you because it is a favourite around our house for its incredible flavor, nutrition, and ease!
CAULIFLOWER RISOTTO
Ingredients
4 cups cauliflower rice
2 cups black beans
2 cups frozen peas
2 cups frozen corn
1 cup shredded cheese (regular or #dairyfree)
1/4 cup hemp hearts
2 Tbsp. avocado oil
2 Tbsp. low sodium soy sauce
1 tsp. tumernic
1 tsp. cinnamon
Instructions
Add cauliflower, beans, peas, corn, oil, soy sauce, and spices to your favorite fry pan and sautรฉ until everything warms through and the cauliflower softens. Then add in the shredded cheese and stir until it melts. Remove from heat and sprinkle with hemp hearts. Serve as a main course, as a wrap filling, or as a side with roasted chicken or grilled salmon!
