For about a couple of years now, our food intake at home has changed to plant based diet - during the week. You don’t have to be vegan ( you can if you wanted to of course ) to enjoy delicious meals. There is so much out there to choose from and so tasty. A little bit of creativity and your lunch can be so delicious and light.
Today at lunch, two hours before yoga session, I had two granary toasts, thin sliced, vegan garlic spread, fresh Italian herb salad mixed with radishes, spring onions, fresh parsley and cherry tomatoes, topped up with dash of olive oil and balsamic glaze vinegar.
