Meal prepping for the week and I wanted to share my favorite recipe I’ve discovered since re-igniting my health journey. It’s tough to make things that both my husband and I will eat, but my pineapple-lime cauliflower rice hits the spot in so many ways. I’ll be pairing it with roasted green beans and baked Cajun chicken for lunch this week. Keep reading for ingredients and instructions for cooking this tropical deliciousness!
~Pineapple-lime cauliflower rice~
Approx. 3 servings at 135 calories each
2 bags frozen plain cauliflower rice (I use Green Giant)
8oz can crushed pineapple in juice
Green onions (separate white and green parts and chop both into small slivers)
Lime zest (about one small lime’s worth)
Lime juice (half of a lime)
3/4 to 1 tablespoon of butter
Salt and pepper to taste
Cilantro (optional if you think it tastes soapy)
- Heat butter in pan at medium heat. Once hot enough, add white parts of onion and cook until they start to brown slightly. Don’t skip this step - the aromatics from the onion are key to making this taste good.
- Add frozen cauliflower, lime zest, about 3/4 of the crushed pineapple, and salt and pepper to the pan. Cook for about 5-10 minutes, stirring occasionally. DO NOT add water to the pan as the directions on frozen cauliflower may say. The juice from the pineapple is plenty!
- Once fully heated, drain some of the excess liquid from the pan, and stir in the juice from half of a lime and cilantro. Take other half of lime and cut into quarters to serve with dish. Garnish with green onion slices.
- I like to use the remaining pineapple on top of the protein I serve with the dish but that’s entirely up to you.
EDIT: Here’s the regular rice version of the recipe I modified. Haven’t tried it but in case you hate cauliflower rice here you go 😂😂
