Clash of cultures: moose meat noodle soup! *Swipe right at your own risk*
I've learned about food from cooking from my mother, experimenting (causing mayhem) in the kitchen during uni, and trying new cuisine from different countries. Living in Northern Quebec with the Cree added a new page in my book of food: wild meat!
After learning how to butcher moose, I was inspired to try something new with this gamey meat. The famous traditional Taiwanese dish, beef noodle soup, is a fragrant mix of tender fall-apart beef, chewy noodles, and crisp green onions added right before devouring.
My version uses slow cooked moose meat marinated with star anise, ginger, chillies, soy sauce, bay leaves, and tomatoes. Cooking game meats longer ensures it's safety and breaks down tougher cuts.
