#AnthonyBourdain RIP. You introduced the world to the famous #TheLunchLady #NguyenThiThanh in #Saigon and she’s changed the food world. Today, she served #banhcanhcua aka crab udon soup #Vietnamese style and super fresh.
#Bourdain raved “…the broth that the gods would have suckled on... Like all truly great #soups, it soon becomes center of the universe. You pass through an event horizon of pleasure, moments ticked off in mouthfuls, everything else ceases to exist.” She has a daily rotation of her #noodlesoup dishes which she labors every morning to get the freshest ingredients and there is only one soup per day on the menu. #Streetfood menus tend to be minimal, no more than four dishes at most. But she gets so many, it’s dizzying the setup. The fish based broth is golden brown. The soup is warming, comforting, homey and somehow reassuring. It’s thick, rich, velvety. There’s shrimp, fish cake, crab meat, quail eggs, bbq pork slices, beef, and little mushrooms. Strangely, the taste is mild compared to the aroma, but it still has all the fishy, salty flavor you’d expect from a #seafood broth, loaded w #lemongrass, garlic, shallots, and onions. The famously slippery #udon noodles – which constantly frustrate the hungry diner by falling off their chopsticks – are easier to manage than usua as I think she uses brown rice so it has a less slippery texture. #banhcanh #crab #lunchlady
