Afternoon Tea Time.
Here’s a health habit make over of the citrus cake I tested last week.
I truly prefer my version, lighter and fluffier (if that’s a word!!)
Make your own, it’s got healthier monounsaturated fats, is wheat free, speedy to knock up and tastes damn good!
Mix 1 cup olive oil and 1/3 cup coconut sugar in a food processor for about a minute.
Then add 1 cup yoghurt, 2 eggs, zests of an orange, 2 lemons and a lime and also the juice of one of the lemons. Mix again for about 30 seconds.
Finally add 220g whole meal spelt flour and 3 tsp baking powder. Pulse for 5 seconds.
Divide the mix into 2 greased round baking tins and bake in a preheated oven at 160 C for 20 mins.
While baking, take the juice of the orange , lemon and lime and reduce in a pan by about 1/2.
When the cake is cooked and cooled , using a skewer, prick holes all over the underside of each cake and pour the juice over.
Sandwich the cakes together with lemon curd and yogurt.
Afternoon tea ready in half an hour! A better for you afternoon treat!
