Recreated this yummy meal for lunch that I saw at a restaurant a few nights ago 😍

Chicken Kabob. Made chicken thighs for protein & fat and added some golden berries ... omg these are delic! I’m addicted and add to any meal that calls for tomatoes. They are sweet and yes as they are called have a berry taste 😋

I didn’t have hummus so used Baba Ghanouj instead and switched out pita bread for a large Ezekiel sprouted grain tortilla 👍

Made an arugula and tomato salad with broccoli for extra greens ❤️

For my pescatarian friends salmon or shrimp would be great options.

Vegan peeps ... roasted tofu would be delish!

Keto ... add 🥑 and walnuts to salad for healthy fats.

Today’s lesson: When life gets tough, when life throws you a curveball just do it, get it done. Life is full of the unexpected

A little deep for just a workout issue but still so relevant.
I woke up this morning expecting the usual 20 minute Transform 20 workout. But when i logged onto my BOD and saw Shaun-a-thon & saw 60 minutes & saw 9 transformers on my tracker instead of 3 i almost climbed back into bed!! I didn’t have time for that. The girls and dogs needed me and i still had work today AND juan is traveling .... so it’s all me
But no quit in here! So 60 minutes, 9 transformers, lots of cursing, sweaty clothes and extra breaks later i had done it!!
Don’t Quit on yourself when things don’t go as planned. You are stronger than you think

I have been looking forward to this all day. It doesn't look great but tastes 👌. Steak burgers 🍔 with cheese 🧀 mushrooms 🍄 onions and bbq sauce. Ending the day on 1,305 calories and should just about hit my 10,000 steps by the time I go to bed. Day 2 back on track and I feel soooooo much better for it!

Picnic style lunch today with the hubs to enjoy this beautiful weather! I love getting to meet him on base for lunch dates every so often 😍❤️🌷☀️ I had a sandwich with turkey (1sp), natures own butterbread (3sp), center cut bacon (2sp), ultra thin provolone (1sp), lettuce, and a tiny bit of light mayo and mustard (0sp). Also 2sp worth of reduced fat kettle cooked bbq chips and an apple. I am STUFFED. .

A Jamaican inspired "jerk" bowl with rice and gungo peas, carribean spiced strawberry mango salsa, jerk tempeh and grilled mini peppers on a bed of spinach, spring leaves, and cilantro.
Prepped Rice and peas adapted from https://brooklynactivemama.com/delicious-authentic-jamaican-rice-and-peas-recipe.html
Adaptations: unsweetened milkadamia instead of coconut milk, vegetable broth instead of water, and whole grain brown rice for Jasmine rice (cooked 45 minutes then added canned gungo peas at the end)

Carribean spiced mango salsa adapted from http://caribbeanpot.com/a-refreshing-mango-strawberry-salad/
Adaptations: added 1 tsp of blackened seasoning in substitution for pepper and salt

Jerk tempeh
Steamed tempeh 10 minutes, rinsed and patted dry to remove the bitter taste.
Then marinated in homemade jerk sauce

Adaptations: omitted oil, used fermented ketchup, coconut aminos instead of soy sauce, and date paste to taste instead of brown sugar
