As I am finishing my Holistic Nutrition Program, I have really come to appreciate these gems even more. As I finish each chapter I feel like yelling out to everyone "EAT MORE FRUITS AND VEGETABLES"! The textbooks discuss various vitamins, minerals, diseases, symptoms, diets, etc. and yet there always seems to be the same basic concept of prevention; eat more fruits and vegetables. Although I am vegan and eat mainly fruits and vegetables, I know there can still be a gap in my nutrition for a variety of reasons (soil depletion, eating the same items regularly, limited local produce during different seasons, etc.) That is why I am more confident knowing my family and I are getting 30 different fruits and vegetables each morning to fill that gap and to keep me and my family healthy.
