🙆 Δεν έχει τίποτα να ζηλέψει από τη γέμιση του κιμά, είναι vegan friendly, όπως και φιλικό για άτομα που δεν είναι φίλοι των οσπρίων
🙆 Πάμε να το κάνουμε
Θα χρειαστείς για 8 μερίδες 🛒
▶️ 8 - 10 φύλλα λαζάνια
▶️ 2 φλ. Φακές
▶️ 1 φλ. Ζωμό λαχανικών ή νερό
▶️ 2 κ.σ. ελαιόλαδο
▶️ 1 κρεμμύδι λεπτοκομμένο
▶️ 4 σκελίδες σκόρδο λιωμένες
▶️ 1 μεγάλο καρότο τριμμένο
▶️ 1 μεγάλο κολοκύθι τριμμένο
▶️ 1 φλ. Φρέσκια ντομάτα τριμμένη
▶️ 2 κ.σ. ξίδι
▶️ Θυμάρι, αλάτι και πιπέρι
▶️ Τυρί τριμμένο (προαιρετικά)
🙆 Για την εκτέλεση
🔽 Σε ένα κατσαρολάκι προσθέτεις το κρεμμύδι και το σκόρδο
🔽 Μόλις μαγειρευτούν προσθέτεις τα λαχανικά και το ξίδι για δύο λεπτάκια ακόμα
🔽 Στη συνέχεια, προσθέτεις όλα τα υπόλοιπα υλικά και τα αφήνεις να σιγοβράσουν για 10 - 15 λεπτά
🔽 Τέλος, προσθέτεις σε ένα ταψί τα λαζάνια και τα γεμίζεις και περιχύνεις με σάλτσα ντομάτας και τυρί
🔽 Ψήνεις για 30 - 40 λεπτά

This morning I worked out before school and I did an easier, less intense workout bc the past few days I have worked out hard. The holidays are a tough time for anxiety, I know I have been struggling the past few weeks. I recommend trying to focus on the experiences with family rather than the food. Just try to let go and focus on having fun!! When you feel yourself getting anxious, think of things you are grateful for, it always helps me. I used to work in the bakery and pastry kitchen with a few awesome bakers and chefs around the world, one of them is an Egyptian baker that make seriously good bread with not just his experienced artistic skills but also passion and love, he has taught me how to appreciate good bread. One thing about bread culture in Asia (with similar culture to me) is that hard bread often doesn’t get as much appreciation and so underrated, bread that has a crisp crust on the outside and chewy on the inside are usually not as popular, not to mention sourdough bread, a wholesome fermented bread with a dark(& sexy) crust with sour taste unlike the conventional refined, sweet and soft white bread.

Conventional bread that often made of wheat, contains the famous gluten and lectin that cause inflammation and intestinal permeability (leaky gut) also there’s phytic acid which commonly found in most grains, a natural protective mechanism to protect grains from its predators.

Phytic acid binds with minerals, which reduces the ability of human body to absorb nutrients like iron and zinc, which is why eating a diet heavily base on grains without properly nourish with other mineral and nutrient-dense food can potentially lead to nutrient deficiency. That doesn’t mean to completely remove grains out of a diet, but to mindfully proportion them(unless for medical purposes) for example having some better grains like cleaned, cooked and cooled white rice once or twice a week or if you like bread go for sourdough.

Sourdough bread is a fermented bread made with live fermentation culture that naturally contains lactic acid bacteria. During the fermentation process, carbs, phytic acid and gluten get degraded and broken down by the bacteria hence increases the bread nutrient profile, reduces glycemic response and it’s much gentle to digestion depending on how well you tolerate them. I can see a significant difference on my performance when I consume sourdough bread instead of conventional bread that is sugar, gluten & phytic acid heavy, which often causes my blood sugar go yo-yo and migraines.

Cómo les conté en mis historias, estuve en @justorestaurante , un restaurante #vegano al que hace rato tenía ganas de ir, y como podrán ver.en las fotos, satisfizo plenamente mis expectativas! Así que si tienen la oportunidad de ir... No lo duden! 🍛 El tamal de quinoa que es súper rico! Los frijoles crocantes, una textura inesperada. 🍄El arroz cremoso de setas estaba delicioso! Los portobellos Fritos (o al horno) literalmente sabían a chicharrón, me impresionó bastante 😅 pero se que para muchos eso será un plus 🍅 Pero mi favorita, debo confesar, fue la crema de tomate con queso crocante 🤤🤯 demasiado rica! 🍧 Por el lado de lo dulce, el merengón con fresas y frambuesas estaba espectacular! Súper delicado en textura y sabores 🥧 Y por último el cheeseecake de limón con mermelada de arándanos estaba súper rico. Si bien la mermelada estaba fuerte y competía un poco con el cheeseecake, la verdad sea dicha no sobró ni una migaja 😅

Un 💯 en todo, especialmente en amabilidad! La atención excelente!

As I told you in my stories, I went to justo, a #vegan restaurant I've been wanting to visit a while ago, and as you can see trough the pics, it fully met my expectations! So if you have the opportunity to go ... Do not even doubt it! 🍛 The quinoa tamale was really good! The crispy beans: an unexpected yummy texture. 🍄The creamy mushroom rice was delicious! The fried (or baked) portobellos literally tasted like pork rinds, I was a little weird for me 😅 but I know for many of you that would be a plus 🍅 But my favorite, I must confess, was the tomato creamy soup with the crispy cheese 🤤🤯 Sooooo good! 🍧 On the sweet side, the meringue with strawberries and raspberries was just spectacular! Delicate in texture and flavors 🥧 And finally the lemon cheeseecake with blueberry jam was also really good. Although the jam has a strong flavor and competed a little bit with the cheeseecake itself, truth be told I didn't leave a crumb 😅

A 💯 in everything, especially their people! They were super nice and service was excellent!

Just a quick reminder that’s it’s okay to post ‘uglier’ looking foods/meals on Instagram :) for me on this page I’m showcasing what you can eat as a vegan in all kinds of situation, for example I’m not well right now + I really didn’t feel like cooking so i microwaved some Amy’s kitchen split pea soup + had it with some toasted sourdough bread. This ‘meal’ is actually very tasty but it doesn’t look ‘pretty’ so most people wouldn’t post something like this. I know people love making their Instagram look aesthetic as they can but I just wanna show realism + that you can eat good vegan food no matter what situation you’re in :) hope this helps some of you guys 🙌🏻

🍠 Sweet Potato Toast 🍠 No, obviously it’s not quicker than real toast, but it is much more satisfying and a tasty change if you have the time. You just thinly sliced a sweet potato long ways, oil both sides and bake for 25 mins or until soft! I had mine topped with fried eggs and fresh basil pesto. I broke the yoke on the second egg so it didn’t make the picture, but it did make my mouth! 😋

Enter QUINOA: 7 Ways to Add More Quinoa To Your Life

1️⃣ On the bottom of a bowl loaded with veggies and arugula on top: Bonus: Add a fried egg or meat, if you eat them. Bowls are my FAV!

2️⃣ As a side dish, if you like food separate

3️⃣ Mixed in with oatmeal or pancake mix

4️⃣ On top of a salad

5️⃣ Added to soups or chilis

6️⃣ Inside a taco or burrito

7️⃣ In any recipe that calls for rice or breadcrumbs

HOW TO PREPARE: Dry toast it in a pan on medium-high heat for a few minutes. You’ll smell it. This gives the quinoa a nutty flavor-so good!

When it’s toasted enough, add water or coconut milk, bring it to a boil, reduce the heat and cover it for 15 minutes. EASY.

The best 3-ingredient all natural treat that is so popular with kiddos and grown-ups. Such a rich decadent taste that will make you forget about all the store bought Christmas treats (almost 😉).
It‘s 1 cup of almonds, ground in a high speed blender. Add 1/4 cup of raw cocoa powder (and a pinch of salt and vanilla if u like). Blend. Then add 1 cup (approx. 10) medjool dates and blend to form a thick paste. Form into a big ball, start taking small bits and form smaller balls and roll them in a bit more raw cocoa. Voila. Even great as a Christmas dinner dessert or little treat inbetween. Also great as a good source of fuel while breastfeeding. 👌🏻

have you ever read ‘diet’ advice that tells you to limit fruit because of sugar?? I think of this a lot of mornings when eating my breakfast, as most days I probably get 4-7 servings of fruit. It’s fair if you don’t find you thrive on fruit as much, or perhaps have an aversion to it (maybe certain ones bloat you or disagree, etc.) BUT there is no reason to limit them if you want them. It’s nature’s fast food yo!🤩packed full of nutrients; vitamins, minerals and lovely carbs our brains love. But I’m no ‘fruitarian’...if anything recently I’m the complete opposite (upping my fat intake again) and I don’t believe a nutritionally balanced diet can be built on fruit alone. We need all the micronutrients! So, what I’m saying is, don’t listen to stupid ‘low carb’ ‘low anything’ diet. Listen to what your body wants. If you want that second banana, or more grapes, or any food for that matter, just eat! We aren’t here long enough to live a life of restriction 💖💖🌈😘
