Today is World Diabetes Day.
Diabetes was declared an epidemic more than 100 years ago. It has become all too prevalent, striking far too many, likely including a loved one of yours. And one in two people living with diabetes is currently undiagnosed.
My father is my hero, my mentor and unfortunately, a type II diabetic. I started this as a response to his struggle, and I hope that our treats can continue to provide just a glimmer of satisfaction, even hope, to those that are struggling with maintaining their sugar levels.

Happy Wednesday night Friends!! Sorry I’ve been MIA on posting 🤷‍♀️. I think I’ve been in a little rut! I’ve actually been cooking, just haven’t had the energy to make it pretty for a pic😬🤷‍♀️ (and tonight I had to make do with bad lighting, but oh well🤷‍♀️🤷‍♀️🤷‍♀️) . Maybe it’s this weather, or maybe it’s the realization that I’m about to be an empty nester that’s been getting me a little down😢. Either way, I just tend to slow down and retreat when I’m feeling low. No worries, getting back in the swing of things ASAP! ..

Tonight, I made this tri-tip roast that I got this month in my @butcher_box ! This has quickly become my favorite cut to cook, both for the taste and for the ease! It’s practically fool proof!!! .. ....y’all NEED to try this!! This is good enough for company 🙌🙌🙌. ..
Here’s the recipe👇
For the Balsamic Tri Tip Marinade:
✨tri-tip roast.
✨4 cloves garlic, minced.
✨2 tsp rosemary.
✨1 tsp ground black pepper.
✨2 tbsp olive oil.
✨1.5 tbsp coconut amines + .5 tbsp @redboatfishsauce (Or 2T soy sauce) .
✨1/2 cup balsamic vinegar.
Marinade it for at least three hours, or even overnight. To cook, sear on both sides in an iron skillet then transfer the skillet to a 350 oven for about 15 minutes per pound. It’s best to use the a meat thermometer to see when it is done! After letting it rest for at least 10 minutes, cut in thin slices against the grain & pour some of those cooking juices over the slices!🙌🙌🙌🙌YUM!!!!. ..

Can I be honest with you for a second?
.
I’ve been avoiding this app like my life depends on it. I love what this space provides as a place to share, connect, express, etc.
At the same time, Instagram gnaws at my insecurities like no other. My need to be beyond perfect, my need for validation, and my social anxiety, multiplied by posting schedules aesthetic, comparison, follower counts, etc. These things take up space like a dull hum in the back of my mind constantly.
And so I withdraw or deactivate or silence myself.
But the truth is- my passion for sharing my life with you is greater than my insecurities. I care more about sharing wellness, consciousness, sustainability, and soul-deep joy than I fear being liked or unliked.
So I’m going to share, DESPITE my fear.
Many of us feel like we lack autonomy. The question I want to ask is how much of your personal power are you giving away freely? How much space are you giving to fear, validation, the need for control, perfection? How much of this fear are you willing to blame on anyone and everyone before realizing that giving up your freedom and joy is a personal choice you’re making?
Here’s my answer: I’m giving away MOST of my personal power daily. I’m blaming everything to avoid responsibility.
What would it look like if we, as a collective, acted courageously enough to take the reins of our fears? Of our lives? Who would you be? What would you do? Tomorrow, when you wake- be THAT. Do THAT. Set yourself free. One day, one moment at a time.

(Side note: I am NOT referring to systemic or social injustice in the context of personal power.)

Yu Choy Sum. One of my favorite cold-weather vegetables!
.
It's been REALLY cold here for the last couple of days (I'm currently huddled under a fuzzy blanket with my snoring chihuahua and a hot cup of chamomile tea!) and we have snow in the forecast for tomorrow! This will be the earliest snow here in Northeastern Pennsylvania since I moved here in 2012 and I'm really not physically or emotionally prepared to wake up and see snow all over the ground. (I'm also guessing the little furry guy next to me won't be very happy to have wet, freezing paws tomorrow either! So, tonight I'll be spending some time digging out the winter gloves, scarves, parkas, and snow boots from the back of my closet! (*mental note to self* find the dog's boots too!)
.
But with these blustery and frigid days comes some really wonderful vegetables which just don't thrive during those hot summer months! I LOVE large bowls of sauteed Asian greens with fragrant aromatics like ginger, galangal (that's a fragrant Thai ginger, in case you didn't know), and tons of garlic with maybe a spoonful of my homemade sweet, and spicy gochujang (Korean chili paste). Yu choy sum is similarly sweet like Chinese broccoli, but a little more peppery and almost has the texture of steamed asparagus when cooked. It's perfect for a cold night!
.
I think I may have to go "full-comfort-food-mode" tonight and serve it over a pile of mashed rutabaga and sweet potato! Sounds like heaven, doesn't it!
