It is pastila - a kind of confectionary which was immensely popular in the Tsar Russia. It was made from tart apple puree, egg whites and sugar and cooked for hours at low temperature in special ovens (almost dehydrated). This resulted in a unique flavor and texture reminiscent of marshmallows.
It is gluten-free and has lots of pectin in it, but also contains sugar and eggs. So it is not entirely guilt-free, but it is delicious and I do enjoy it every now and then.
