Lunch was so nutritious and delicious!
What I ate:
Romaine lettuce topped with green pepper,black beans, green onions, cherry tomatoes, pepitas, strawberries, and my new favorite thing roasted chickpeas drizzled with a little balsamic vinegar.
Recipe for roasted chickpeas:
Heat oven at 400F. Drain and wash 1 can of chickpeas. Drizzle a little oil and salt(optional)( if you prefer no oil there has to be a recipe somewhere )then spread out on a baking sheet. Bake for 30 minutes, moving the chickpeas around every 10 minutes. After they're cooked sprinkle with your seasoning/s of choice. I used chili powder and cumin.
