This morning is as far from a pleasant summery morning as you can get, but I made some Bircher Muesli last night for something different - oats, grated apple, spices, dried fruit and water is all you need. You can make enough for one or enough for a whole family for 4-5 days in one go, whichever suits.
.
The kids, Mark especially, love Bircher, which makes me happy as oats are a much more filling breakfast for little tummies than toast or weetbix. Topped with yoghurt, fresh fruit, nuts and seeds, it’s the perfect start to the day. Now we just need some warmer weather...

My most powerful addiction: the Omega-3 mix. I tell myself it’s healthy. Except that the cranberries have mad sugar and the ω3 ALA convert to EPA/DHA (active forms) at between 0.5-8% in humans so that 280mgs means diddly. Gotta make sure to stick to a high-quality Omega-3 supplement.

Eating healthy can be simple, but sometimes it is hard to know where to start. I get that! I had no idea what was good for me and how to make anything when I started this journey🤷🏽‍♀️ I just began attempting new recipes and failing many times in the process! Through trial and error, I discovered the foods I liked and even started eating things that I thought I never would! Like mushrooms and brussel sprouts taste so good😋 It’s crazy how much your taste buds can change!

Also, I had some great resources on different kinds of recipes as well as how to prep my food. Learning these tools have absolutely helped me in the kitchen which in turn has improved my overall mindset on food! I always say, when you've got four different types of berries in a bowl, you don't need any extra sweetness. Constantly saying that.

I made homemade granola a few days ago following @cookieandkate's very simple and very customisable healthy granola recipe. I've discovered I really like a savoury-tasting granola, with just a hint of smoky sweetness coming from maple syrup. Along with oats I add pumpkin and sunflower seeds and pecan nuts. I don't include any dried fruit, instead loading on fresh fruit as pictured.

Berries are a great fruit to eat if you're trying to keep your calories down as they're lower in sugar than many other fruits. This bowl, granola, semi-skimmed milk and all, came to around 450 calories I reckon. And I get all the lovely vitamins and nutrients from the fruit, oats, nuts and seeds!

My home made raw chocolate covered dates...double dipped and sprinkled with a assortment of toppings▫️This is my absolute favourite treat & home made sweets▫️It is completely celiac safe, loaded with antioxidants and feel good chemicals📩Below you will find the recipe, it's so easy to make with no special skills needed so there is no excuse for you not to try, gobble up and enjoy!

🔸️½ cup raw cacao butter
🔸️1 tbsp raw agave syrup
🔸️⅓ cup raw cacao powder
🔸️20 medjool dates (they are big & juicy), pits removed
🔸️Assorted nuts (pecans, almonds, cashews, hazelnuts, walnuts)
🔸️Assortment of toppings

1) Carefully slit each date with a knife and stuff with your choice of nuts.
2) Place dates in the fridge overnight to have thrm nice and cold
3) To make raw chocolate, slowly melt raw cacao butter using a double boiler over low heat. Be careful not to overheat.
4) Once cacao butter is melted, add agave syrup and whisk with a fork. Mix well to combine.
5) Add raw cacao powder and keep whisking the chocolate mixture until silky smooth.
6) Line a tray with baking paper.
7) Take the dates out of the fridge and dip into the raw chocolate. Place on lined tray and put back in the fridge for another 20 minutes.
8) Take the dates out of the fridge and again dip into the raw chocolate for the second coat then sprinkle your choice of topping
9) Place back onto the tray and into the fridge to set.
10) Keep stored in the fridge. These will stay fresh in the fridge for 2 weeks but I'll be surprised if it lasts longer than a few days...it's too delicious!

A homemade iced matcha latte fueled my afternoon as we hosted a Non-Dairy Milk Demo at work. .

My choice of non-dairy milk: coconut 🥥 but I am in love with the versatility of all nut and seed milks.
.
Two of my favorite takeaways from today: 1— you can control the fat content of your milk servings.
More water can create more milk yielding a lower fat content per serving. Less water yields a higher fat per serving. 2—adding a pinch of salt helps to break down the cell membranes in the nuts and seeds to release nutrients and enhance flavor profiles.

I recently asked if y’all want quick and healthy ideas for the morning because so many people skip, and the response was 100% yes please! I cannot day enough how important it is to eat when you wake up!
My husband never feels hungry so our go-to is a smoothie (which you can make in 2 minutes by the way). Another option we like are on the go cereal bars! Because, let’s be real- we are too busy heading out for the work day to sit down and have a simple bowl of cereal....

Almost weekend baking: Maple Butter Nut Granola from Feeding the Whole Family. I love this recipe because of all the yummy nuts and seeds, and the maple syrup and butter give it a healthy dose of lush. My only addendum: stir granola often and bake on the shy side of the 45-60 minutes called for. But maybe my oven just runs hot! 🤷🏻‍♀️ .
