Take a deep breath - it's Sunday! A time for relaxing + regrouping for the week ahead. It's also the day of the week one of my most favorite meals is served...Brunch!!!! Working on a little sweet treat to add to your brunch menu lineup. Imagine if your favorite parfait cup and oatmeal energy ball came together in perfect harmony! I re-introduce the Breakfast Tart loaded with yogurt and favorite toppings. It's all about foundation ... the base of your creation starts with this perfect no-bake raw crust! 1cup shredded coconut + 1 cup almonds + 1/2 cup walnuts + 1/2 cup rolled oats + 1 1/2 cups medjool dates (pits removed) + 1/2 tsp cinnamon +1 tsp vanilla bean paste or extract + 1/2 tsp sea salt. Blend all the ingredients in your food processor. The mixture will ball up and be a little sticky... this means it's ready! Press down in mini tart pans or pie dish and finish off with your favorite yogurt or cream.
