4-INGREDIENT BANANA COLLAGEN & FIG COOKIES 🍌
I revamped my banana collagen oatmeal cookie recipe by adding in organic dried figs & ou baby am I ever glad I did!!! 😍 adding dried fruit into cookies is a great alternative to chocolate chips every now & then to bulk ‘em up with a more natural source of sugar, fibre, antioxidants, vitamins & minerals!
BUT, PRO TIP: when buying dried fruit, ALWAYS make sure that the only ingredient is the fruit itself, that it’s unsulphured (no preservatives, additives or colours added to make it look pretty & bright) & that it contains no added sugar!
The base for the batter is GF rolled oats & @vitalproteins collagen peptides for all the fibre, protein, antioxidants, gut healing & beauty-boosting properties! They’re sweetened with just ripe banana & organic sun-dried figs, an amazing source of fibre, calcium, iron, antioxidants & great for bone health, boosting circulation, skin, digestion & balancing blood sugar levels!
They’re moist, sticky & taste like caramel, delicious, satisfying, filling & totally energizing because they’re filled with all the carbs & protein! 💯
1️⃣YOU NEED (for 9 cookies):
1/2 cup GF rolled oats
3 scoops @vitalproteins collagen peptides or sub for any protein of choice
2 mashed ripe bananas
1/2 cup dried organic figs, diced
Preheat oven to 375 & line a baking sheet with parchment paper. Spray lightly with coconut oil.
Add all the ingredients to a bowl, mix until a batter is formed & scoop it onto the baking sheet to form 9 cookies.
Bake for 18-20 minutes until edges & tops are browned.
Remove from the oven, let cool & firm up & enjoy! 💕
