I'm about to bike to work on the east side for the third day in a row... can't believe how much energy I have. I have been drinking 100oz of water a day since I started, which is super important for all this activity I'm doing (that I didn't have much of before) in the heat. Also, my skin has cleared up tremendously. This outfit didn't even fit me in the winter! I tried it on and was disgusted with what I saw - I bought this tank in 2015 and it was huge on me.. Patience. #facetofacefriday front porch and cross body purse edition! •• I’m feeling a smidge puffy today and I honestly think it was due to cheese so I’m gonna try to cut most dairy out of my diet. Minus laughing cow cheese (that doesn’t seem to bother me) and the exception of a tablespoon of cream cheese that I use sparingly.

Take me home, country roads. Tomorrow I am heading back to Nebraska for the first time since my dad passed away in January, I’m a little nervous about how my emotions will stand up...but I will do okay! I have all my fuelings set aside for Saturday-Monday with a spare day, just in case. I’m ready to dominate some cleaning of the farm, even though it’s supposed to be hott AF outside! Nebraska humidity is no joke. Ugh! But I’m excited to get out of town for a lil while. And then in June we head to Pittsburgh and then in July we head to Delaware! Ahhhhh! I’ve lost 35 pounds, but I’m still about 50 pounds away from my goal weight. But guess what? I LOVE my body. right now. today. even with my cellulite, belly fat and double chin.⠀
I *actually* don’t really care about the number on the scale (at least on my good days.) Weight is pretty much an irrelevant number. I care a whole lot more about my energy level and feeling good in a pair of jeans. I’m more focused now on reaching my goal of running a 10 min/mi pace, than I am worried about that # on the scale.⠀
I first started feeling like I was fat when I was only five-years-old () so I’m still working through a lot of residual body shame junk. I shared about that on my blog tonight (#linkinbio) if you want to read it.⠀

I see the light at the end of the tunnel! My goal is to lose 3 lbs a week, but as long as it’s moving I honestly do not care! Happy Scale says I could hit my ULTIMATE GOAL WEIGHT by December of this year! Holy crap, this is mind blowing 🤯 I started @Optavia in the hopes it would help me not need bariatric surgery. We decided it was going to be a $9k deductible that we could pay off for a few years. Or spend what I do with Optavia instead. I chose the latter, and I can’t wait to see how progress is going around Christmas time!

We loved neighborhood gossip and we loved to eat. My grandma introduced me to my love of food at 9 years old. She spoiled me with food, whatever I wanted I could have!
Having an Autoimmune disease and a Hormonal imbalance have made it hard to continue to love food and me at the same time. I’ve spent years trying to “fix” me. But what I finally decided was I have to get better because I love my body, not because I hate it. (Thanks @krissy_larsen ) here’s to progress!

Healthiest spaghetti I have ever had with a crap ton of salad on the side! I was looking for zoodles (I'm too lazy to actually spiral zucchini) but the store didn't have any and my coach gave me the go on these. Cooling off with a klarbrunn sparkling blueberry passionfruit water and a box fan pointed at me on high at work after riding my bike here (4 miles). I'll be riding it home as well - I'm thinking of doing this during the summer to increase my activity! Luckily I have a very chill job as an in-home respite caretaker that gives a lot of down time to prepare my fuelings and relax a bit after this ride (notice the nerf guns covering the floor behind me). Also, I've decided that I'm going to justify my love for acrylics by spending the money that I would be using to eat out with friends and buy munchies on them. I have a terrible nail biting habit that I've never been able to break, so these nails keep my hands out of my mouth and my confidence up - no one likes stubby, bleeding fingers. About to eat my third fueling for today, a tropical smoothie. I woke up pretty late which is usual after opening the coffee shop the day before, so this third fueling is later in the day than it should be. I'll be making a fueling of mashed potatoes to eat with my dinner to get them all in before it gets too late in the evening. I'm feeling so in control of life. I’m starting to feel soooo good in my skin! I’m 1 pound away from a 20 pound loss in just under 4 weeks. 4! I surpassed almost 60 pounds from my highest ever. I feel so good and maybe even blessed to have found @optavia, it gave me my life back and is giving me hope that one day I will be able to conceive a child and will be in the healthy weight category.

This was probably the most difficult but also the most exciting of times for me! Karri and I made our first trip outside of North America and got our first passport stamp in Punta Cana, DR. And we did have a terrific time living life to the fullest! Swimming with dolphins was the highlight, but we also over indulged in the consumption of food and drink at an all inclusive resort. We arrived back home one week ago today and the scales were not kind!! I was pushing 220. My goal weight is 210 that I reached on August 17th, 2017- nine months ago!! Immediately on arriving home I went back to my habits of health that got me from 281 lbs to my goal. I weighed in this morning at 213.2, down 1 lb from exactly one month ago!! Here is a picture from Key West in March 2017 beside a picture in Punta Cana after swimming with the dolphins! Something I would have never imagined doing just a year ago!” YES YES YES
Celebrating a couple #nsv on one of the hardest days I've endured so far. Today I had to call my two sisters to tell them that our mom is probably dying and we should make arrangements to go see her (we're all in different states). Those are calls you aren't prepared to make.
So as I sit here, waiting to take off, I'm both sad and so proud of myself for getting back on track hardcore this week (and all my work the last 7 months). This is the first time in probably 15+ years I haven't needed an extender on an airplane!! Also, I weighed in this afternoon since I'll likely still be traveling Saturday and even with lots of food and water in me, I was below 300 for the first time in probably the same amount of time. Yes!!!
These next few days will be trying as we make decisions about our mom's care and, for me, being away from my baby for the first time. I hope that with the coping skills I've learned on this eating plan, I can keep control of my food choices.
It’s what’s for dinner!
Cajun Shrimp, Sausage, and VegetableSkillet
Makes 6 servings
1 Healthy Fat
2 1/3 Condiment
28 ounces cooked shrimp
12 ounces jennie-o turkey sausage
3 Cups zucchini
3 Cups yellow squash
1 Cup asparagus
2 Cups red bell pepper
¼ Teaspoon salt
½ Teaspoon pepper
2 Tablespoons olive oil
2 Tablespoon Cajun seasoning
In a large bowl add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated.
Add to a large skillet and turn to medium high. Cook for about 5-7 minutes until the shrimp is pink and the vegetables are tender.
Garnish with fresh parsley if desired and serve immediately.
Today I almost had a cookie, like I was about to cut it into quarters and take a bite size piece. I went back into the kitchen several times before I made the decision to cut into this cookie. I ended up NOT eating the cookie due to it being super dried out and I figured that it wasn’t worth it. But I started getting into my old mindset that a cheat is okay, but I know that cheat would’ve lead to more cheats. And that is not okay. I started Optavia so I could get some success in my weight loss journey. I’ve invested quite a bit of money into this meal plan, why screw that up for a cookie? This may have been one of the biggest #nsv I’ve ever experienced!
Kevin is such an awesome guy, and I love his story! I can tell you, he looks just as good today as he did 7 years ago and he's living an incredible, optimal life!
