Happy lunch box feeling.
It may look like a normal lunch box to you but it so much more to me.
Those little bananas are #homegrown and the kids are getting 9 veggies at school today.
I’m pretty happy.
Inside the container is a frittata style dish with
Kale, cabbage, carrot, onion, garlic, spinach, tomato, mushroom and eggs.
I put all the raw veggies shredded roughly into a baking dish (except the tomato and mushroom), covered them with about 15 beaten @little_hill_farm Eggs and a slug of milk, @thermomixaus Veggie stock paste, salt and pepper.
I sliced the tomato and mushrooms and gently layer these on top in a pattern.
Baked at 180degrees until the whole dish puffs up, approx 40mins.
It’s great served alongside @tryjamesandrose Brinjal pickle.
They also are currently taking whole capsicums for fruit break, their choice, not mine.
