First #perfect #perfectmeal of the year! Sometime it’s just coincidence but things come perfectly together. #wildboar #redcabbage and #chestnuts . As part of my #luxurydietchallange . Why it is #luxury : #boar is really hard to come by! We are currently in our #holidayhouse in the #palatine in #germany and I found the #meat at the same stand as the cutting board from the last post! The #cabbage is not very #luxurious but #madefromscratch it’s just a perfect match. And you can never go wrong with chestnuts. Why it is #diet : any #gamemeat is going to be leaner than farmed meat. #rotkraut or red cabbage has hardly any #calories and in general it was #lowcarb with just a few chestnuts!
And with all those handicaps my family still more than loved it!

I poured a bit of #oliveoil into a large @staub_de #castiron #casserole pealed and quartered an onion and put it on the stove on full heat, when the oil was hot, I fried both sides of the meat for ca. 2 min until slightly brown. This is just to close up the pores of the outside so the juices stay in while cooking! I took the meat out and left the onion in. I cut the red cabbage into ca. 1cm stripes and cut out the big white stems in the center. And added it to the #pot and kept it a bit on the fire and added ca. 300ml of dry red wine, while heating up the oven to 130•C when it was hot I placed the meat on top of the cabbage and put the lid on and tranferred the pot into the oven! It was in the oven for ca. 4 hours. At the end of the 4 hours i heated up the chestnuts,which i found #sousvide in the cupboard, with a bit of butter in an extra small pot. I took the big pot out of the oven removed the meat and let it sit for ca. 15 min. In that time I removed the chestnuts from the small pot and put them on a small #servingplate in the warm #oven and poured as much of the #cookingjuice as I could from the cabbage to the small pot. I put the cabbage back on full heat on the stove and reduces the liquids in the small pot while stirring as much as possible. And the I servers... hope that was comprehensive as a recipe.
