So, eating has been a challenge the last few days, which is why I haven’t photographed any meals. AIP has eliminated what appears to be some of the IBD symptoms, but I’m still getting nausea, bloating, and upper GI symptoms like crazy. I am scheduled for the SIBO test in a week and until then and the results come back, I’m operating on the assumption that that’s also a thing going on. Had GI surgery last year, twice, an endoscopy, was on antibiotics, and yep, 10 years of birth control and several weeks on acid reducers before I stopped them (they weren’t helping at all). All the risk factors + all the symptoms means I’ll now be doing AIP + Low FODMAP. Bye to my BFF avocado. Hellooooo plain chicken and cucumber. Tonight’s dinner was:
Plain chicken wings, just salt, which were actually pretty good
Sliced cucumber with salt
Celeriac Root, which it’s intense and I’m gonna need to acquire that taste
Chimichurri with cilantro, olive oil, green onion, lemon juice, salt, and ginger. Not sure how I feel about this, but it is a sauce so I’ll give it a whirl.
Also, I cheated today and had one single corn chip. It tasted good, but my stomach was cramping 15 minutes later. I’m on Day 19 today and while it’s simplier, this diet is no joke. Brings up all the emotions, all the feelings, and it’s so easy to go down the path of “I’m going to be sick forever and I’ll never be able to eat anything fun again.” But, while reading about Low FODMAPs + AIP, I was reminded again and again that this is just temporary. We will be able to bring foods back. It won’t be plain chicken and plain cucumber forever.
