FOOD + VIBRATION: i believe real, unprocessed foods are necessary for us to maintain our body, mind and spirit healthy. this applies to what i eat, what donut eats, and what i create for others. ingredients carry vibration and many things influence that vibration: from where and how they are made, grown or produced, to how, where they are cooked. and so, i decide to stick to high vibrational ingredients for the food i make for myself and my loved ones.
it has been an awesome summer up to now. i LOVE working at the farmers markets. i have been making new plans to grow my 🍰🍩 business, creating new recipes, meeting many new faces and touching many people’s hearts and bellies with healthy baked goods that are actually good for them. using REAL, organic, unprocessed ingredients: nut flours, coconut and maple syrup, spices, mixed with local fruits, and herbs, i have spent a big part of my summer making delicious cakes and treats for those of us who cannot eat gluten, dairy, refined sugars or grains. i am not going to lie: it is a TON of work. but it is worth it. the smile on people’s faces, and the way they light up when they enjoy something i created is so deeply satisfying. their vibration rises and therefore, the Planet’s too! ✨

since i was little, i dreamed of owning my own bakery. i actually had a little cookie stand called “galletitas riquííísimas” (delicious cookies) when i was little. years of learning, experimenting, and doing lots of work on myself, and @rawmonaskitchen came to life. the story is actually kind of magical (i will share it another day), but basically, it did not happen by me coming up with a mental goal or a business plan (although those help), but by following my inner guidance and constantly creating. creating new recipes, creating @rawmona, illustrating, baking cakes for my friends, and praying (yes, praying). doors have opened up, i have met the right people and done the work to make this come alive. i have a few weeks left of markets before the end of the season ends. please come by if you are around! would love to see you there. ⭐️👩🏻‍🌾👩🏻‍🍳🍰🍩🍪

Pumpkin Almond Butter Donuts 🍩 ⁣

I’m feeling all the fall vibes already with these cuties!! 🍂🍁🎃 They’re so soft and buttery from the almond butter too! 🍯Yummmm I’m in love! ♥️ 😍 ⁣

They’re gluten free, full of fiber, pumpkin spice & everything nice 😋 I highly recommend using a silicone donut pan too! 🍩💕 Only $12 on Amazon totally worth it!! 😎✨⁣

Pumpkin Protein Donut Recipe 🎃🍩:⁣

🍩1 1/2 scoop @questnutrition vanilla protein powder⁣
🍩 1/3 cup natural applesauce⁣
🍩 2/3 cup @silk unsweetened cashew milk⁣
🍩 1/2 cup organic pumpkin purée ⁣
🍩 1 egg⁣
🍩 2 egg whites⁣
🍩 1/4 cup @bobsredmill gluten free oat flour⁣
🍩 1/4 cup @bobsredmill coconut flour⁣
🍩 1/4 cup @pb2foods powdered peanut butter ⁣
🍩 1/4 tsp sea salt⁣
🍩 1 tsp vanilla extract⁣
🍩 1/2 tsp baking soda⁣
🍩 1/2 tsp baking powder⁣

Glaze: ⁣

🍩 1/3 cup @justins almond butter⁣
🍩 3 Tbsp @pb2foods 🍩 1 Tbsp melted coconut oil ⁣

Directions: Add all ingredients and mix until smooth. Bake at 350 degrees for 12 min. Recipe makes 8 donuts.⁣

Microwave coconut oil and almond butter and Mix in PB2 until smooth. Drizzle then donuts! 😄 Enjoy!! ✌️🦄☀️⁣

Macros per donut: 87kcal, 10g carbs, 8g protein, 3g fiber & 2g fat⁣

What’s the best way to avoid added sugar? Eat whole, unadulterated foods.

Bookmark this list to have on hand the next time you go grocery shopping. You’d be surprised all the hidden ways food companies add sugar to their product.

Below are my “better sweeteners” but don’t be fooled. They are still sugar 😬 As a general guideline, I try to keep my total added sugar to <20g per day.
🍭
✅ Pure maple syrup is a low glycemic sap and contains antioxidants and minerals such as zinc and manganese.
🍭
✅ Raw honey is an incredible medicinal substance, especially manuka. It is a anti-microbial agent and packed with antioxidants and minerals. Watch out for fake honey products (mass produced honey, especially from China) loaded with toxic syrups & sugars and contaminated with antibiotics & heavy metals.
🍭
✅ Blackstrap molasses, has a lot of its sugar extracted and therefore, has a lower glycemic index compared to cane sugar. It is more bitter but also rich in antioxidants.
🍭
✅ Coconut sugar is an unrefined low glycemic sweetener and contains some trace minerals.
🍭
✅ Dates are one of my favorites natural sweeteners since it is a whole food and also come with a significant amount of fiber to balance blood sugar.
🍭
✅ Stevia is 200x sweeter than sugar and can improve blood sugar and insulin response (especially great for diabetics) and does not wreak havoc on the gut like so many artificial sweeteners do. Not all stevia is created equally! Choose 100% stevia extract.
🍭
✅ Monk fruit sweetener and erythritol are okay but they are not my top choices.
🍭
❌Sugar alcohols such as mannitol, xylitol, and sorbitol are fermentable fibers and therefore can cause bloating, gas, nausea, and diarrhea in those that have gut dysbiosis or a leaky gut.

❌Agave is highly processed and a concentrated form of fructose. High processing destroys beneficial antioxidants and fructose is toxic to the liver, where it is metabolized.

Happy Monday! ☀️ To kick off the week we started this morning with DONUTS!!!! My daughter starts kindergarten next week so we’re livin it up 🙌🏽...and I’ll be practicing some recipes that store well since I’m sure our weekdays will get much busier with school and hula!

These donuts freeze really well and last a couple days in the fridge so you can pull ‘em out heat ‘em up and eat them out the door!

🍩 Polka Dot Donuts 🍩
.
Ingredients:
3 eggs
1/4 cup coconut milk
1 cup of almond flour
1/4 tsp salt
1 tsp vanilla extract
1 tsp maple syrup
2 T melted coconut oil
1 T of chia seeds (polka dot 😉)
.
Directions:
- preheat donut maker. I have a @vonshef.us and I love it!
- in a medium sized bowl, whisk eggs and coconut milk till combined.
- add almond flour and salt and combine until smooth.
- mix in melted coconut oil.
- stir in maple syrup, chia seeds, and vanilla.
- pour batter into donut maker and wait five minutes.
- poof! Donuts 🍩

I topped mine with @fourthandheart passion fruit ghee and strawberries for an extra special treat ♥️

Paleo spinach donuts 🍩🍃🍵

Ingredients

Donuts:
1 cup almond flour
½ cup tapioca flour
¼ cup coconut flour
2 TBS coconut sugar
1 tsp baking powder
¼ tsp baking soda
¼ tsp sea salt
½ cup almond milk
¼ cup coconut oil melted
¼ cup honey
2 cups spinach
2 eggs
1 tsp pure vanilla extract

Glaze:
½ cup Paleo Powdered Sugar
½ tsp matcha powder
1 TBS almond milk or to your desired consistency

Instructions

Make the Donuts:

Preheat oven to 350 degrees F and lightly grease a donut pan.

In a large bowl combine almond flour, tapioca flour, coconut flour, coconut sugar, baking powder, baking soda and sea salt. Set aside.

In your mix, add almond milk, coconut oil, honey and spinach. Blend, starting on low and increasing to medium speed, until mixture is completely smooth and green.

Add eggs and vanilla and pulse to combine.

Pour wet ingredients into the large bowl with your dry ingredients and gently mix until combined. Let the mixture stand for 5 minutes.

Evenly divide the batter into your prepared donut pan, filling each “well” about ¾ of the way full.

Bake for 10-15 minutes.

Let sit in the pan for 3 minutes before removing to a wire cooling rack. Cool completely.

Make the glaze:

While the donuts are cooling, make the glaze.

Whisk all glaze ingredients together in a small bowl. If you would like a thinner glaze, add more almond milk. If you would like a thicker glaze, add more powdered sugar.

Assembly:

When donuts are completely cooled, drizzle them with glaze.

Let sit at room temperature or in the refrigerator until the glaze is hardened!

Eat immediately.

Storage:

Store the donuts in an airtight container in the refrigerator for up to 2 days.

Note: If you glaze them the donuts could become a a little soggy if not eaten the day they are made.

Paleo vegan donuts🍩😋 Low calorie, low fat, NO animal products of any kind, NO added sugar, NO grains, and NO artificial ingredients! They are sweet and taste kind of like a combination of a French macaron and angel food cake. If you don’t have a donut pan, you can use a regular cupcake pan, OR you can put this recipe in a mug and microwave it for 90 seconds to make a mug cake. INGREDIENTS: 1/4 cup banana flour, 3 tbsp granulated monk fruit sweetener, 1/4 cup almond milk, 1/2 tbsp unsweetened applesauce, 1/2 tsp baking powder, 1/2 tsp vanilla extract, and a pinch of salt. RECIPE: Preheat oven to 350°F. Mix all ingredients well. Spray a donut baking pan with 0-calorie cooking spray and pour the batter into 3 donut rings. Bake 350° for 7-10 minutes. Before venturing out to Canada, I made a very brief visit to #utah to quickly say bye to friends and family. But there’s always time for coffee…

1️⃣First was @tuliebakery where I got an iced #CafeAuLait. They even steamed the milk to give it that foamy texture without changing the quality or temperature of the coffee. This has set the gold standard of what an iced cafe au lait should be.

2️⃣Also got an #OliveOilCake with #BrownButterFrosting. Incredibly delicious, incredibly moist.
.
3️⃣Just look at that texture.

4️⃣Second was the hidden @cuplacoffeehouse. Seriously, go through a building, go through a side door, go down the steps, go through a small open area, and the coffee shop is revealed. I got The Hot Shot: it’s a #latte with turmeric, honey, and cayenne. Spicy and sweet🌶🍯

5️⃣With my spicy latte is a key lime honey donut. It’s amazingly delicious and also gluten-free and paleo. I couldn’t even tell. As you know, I love my donuts🍩 and this was high on my list. Definitely coming back to this place😋
