I was stuck for ideas for dinner the other day and a friend had mentioned that she had some Mexican chicken cooking away for her in the slow cooker...so that’s what I went home and did!
Found this recipe for beef ☝🏻but I used;
🥑Tbsp cumin to the listed spices
🥑2 lge carrots diced
🥑2 celery stalks, diced
🥑lge zucchini, diced
Cook on high for 4 hours in slow cooker, or over the stove or in oven if you need it quick.
Pull the meat apart with two forks or reverse spin in thermo.
Serve with grated carrot, red cabbage, chopped spinach, bean sprouts, coriander, diced tomatoes, smashed avo and vegan cashew sour cream.
It’s divine! Enough for 2-3 meals!!
