A bowl of Pho makes a happy day!
To my personal standard, a good broth of Pho needs at least 6 hours simmering after few times of boiling points. Vietnamese people can eat Pho anytime, for breakfast, for lunch, dinner, a super in the middle of the day or even a middle of the night. When the weather is hot or cold, when it's raining or sunny, it doesn't matter. It only matters when you want a northern style or a southern style, then it may require you jump in a scooter and go to the other sode of the city to get a bowl of Pho -in style rather than walking up the alley to get it from the Pho-streetfood seller who is also your long-term neighbour, and of course, you don't have to tell them, they know what your taste is, small amount of noodle but giant bowl of broth... rare cooked or well cooked beef :))
