Green Lemongrass is without a doubt one of the best restaurants in Vancouver to get a fix of my favourite Vietnamese dish - Bún heo chả giò. (Grilled pork/spring roll vermicelli bowl)
As this is a dish that is typically comprised of many elements, I find that most establishments tend to skimp out on some key ingredients. However, this place pulls out all the stops.
Resting on top of a perfectly cooked batch of noodles is freshly chopped cucumbers, bean sprouts, basil leaves, pickled carrots, white cabbage, and a layer of crushed peanuts. Then, the dish is seasoned with a dollop of spring onion oil, a dash of fried shallots, and thoroughly drizzled with tangy fish sauce.
To round it all out, you have a grilled pork skewer paired with the most delectable spring roll (pork, carrot, taro, mushrooms, and onions, all wrapped in a bubbly sheet of glassy, translucent rice paper).
Oh, and the chicken salad and pho bowls are good too!
