Herbs do a lot to shape flavor.
there are traditional favorites,
such as myōga and shiso.
I learned japanese summer herb dishes!
As part of the class,
I cooked a simple myōga pickle.
Myōga pickles have a refreshing ginger-like flavor
that makes them great as a side or garnish.
I was surprised
myoga’s color changed 2 times in short times!
When they were boiled,
their color became light.
But after that,they pickled in vinegar,
