Dinner tonight - leftover cauliflower cheese (I chopped up the remaining roast potatoes and added to the dish before putting in the oven 😋), watercress, pickled carrot and radish and a dollop of chilli mustard.
I made the carrot and radish pickle yesterday by mixing very thin peelings of carrot and radish with chilli flakes, lemon zest and salt (scrunching/massaging together for a couple of mins), boiling up a mix of water, vinegar, honey, peppercorns and chilli flakes and leaving to cool before adding to a jar with the veg mix. It was a half and half recipe from two cookbooks but will post the recipe at some point soon ✌. I love having a jar of pickles of some sort in the fridge! Life's little joys 😂
